🍰 Fresh Redcurrant Mint Ice Cream

Ingredients
- blackcurrants, fresh 400 g
- sugar 150 g
- lemons 1 pc.
- gin 50 ml
- mint, fresh 10 g
Instructions
- 1. Thoroughly wash the redcurrants and remove all stems.
- 2. Wash the lemon, cut it in half, and squeeze out the juice.
- 3. Place the redcurrants, sugar, 350 milliliters of water, and lemon juice into a pot.
- 4. Bring the mixture to a boil on the stove.
- 5. Pour the cooked mixture through a sieve to catch the liquid.
- 6. Let the remaining berries in the sieve cool down.
- 7. Squeeze the cooled berries firmly to extract the remaining juice.
- 8. Stir in a splash of gin to taste, if desired.
- 9. Wash the mint and pat it dry with a cloth.
- 10. Pluck the mint leaves from the stems and chop them finely.
- 11. Stir the chopped mint into the juice mixture.
- 12. Pour the mixture into a shallow metal dish.
- 13. Place the dish in the freezer for at least 6 hours.
- 14. Take the dish out every hour and stir the mixture with a fork to break up ice crystals.
- 15. Take the ice cream out of the freezer shortly before serving to let it thaw slightly.
- 16. Shape the ice cream into portions and serve.
