  1. 1. Thoroughly wash the redcurrants and remove all stems.
  2. 2. Wash the lemon, cut it in half, and squeeze out the juice.
  3. 3. Place the redcurrants, sugar, 350 milliliters of water, and lemon juice into a pot.
  4. 4. Bring the mixture to a boil on the stove.
  5. 5. Pour the cooked mixture through a sieve to catch the liquid.
  6. 6. Let the remaining berries in the sieve cool down.
  7. 7. Squeeze the cooled berries firmly to extract the remaining juice.
  8. 8. Stir in a splash of gin to taste, if desired.
  9. 9. Wash the mint and pat it dry with a cloth.
  10. 10. Pluck the mint leaves from the stems and chop them finely.
  11. 11. Stir the chopped mint into the juice mixture.
  12. 12. Pour the mixture into a shallow metal dish.
  13. 13. Place the dish in the freezer for at least 6 hours.
  14. 14. Take the dish out every hour and stir the mixture with a fork to break up ice crystals.
  15. 15. Take the ice cream out of the freezer shortly before serving to let it thaw slightly.
  16. 16. Shape the ice cream into portions and serve.
