🍰 Delicate Raspberry Sandwich Cookies

Ingredients
- butter 75 g
- sugar 150 g
- vanilla sugar 2 tsp
- salt pinch
- eggs 1 pcs
- wheat flour, type 405 200 g
- baking powder 2 tsp
- cinnamon 0.5 tsp
- nutmeg, ground pinch
- blackberry jam 150 g
- powdered sugar 2 tbsp
Instructions
- 1. Put soft butter, sugar, vanilla sugar, and a pinch of salt into a large bowl.
- 2. Beat the ingredients with a hand mixer until the mixture is creamy and fluffy.
- 3. Add an egg and mix it well until it is fully incorporated.
- 4. Mix flour, baking powder, cinnamon, and grated nutmeg in a separate small bowl.
- 5. Add the flour mixture to the butter mixture and knead everything together into a smooth dough.
- 6. Wrap the dough tightly in cling film.
- 7. Place the dough in the refrigerator for about 2 hours to chill thoroughly.
- 8. Preheat the oven to 180 degrees Celsius fan (convection).
- 9. Lightly flour a work surface and roll out the dough to a thickness of about 3 millimeters.
- 10. Cut small diamonds out of the dough using a pizza cutter or a cookie cutter.
- 11. Place the dough pieces on baking trays lined with baking paper.
- 12. Bake the cookies for about 10 to 12 minutes in the oven until golden brown.
- 13. Remove the trays and let the cookies cool briefly on the tray.
- 14. Spread raspberry jam on the bottom side of half of the cooled diamonds.
- 15. Place the remaining diamonds without jam on top to form sandwiches.
- 16. Lightly dust the finished cookies with powdered sugar before serving.
