  1. 1. Put soft butter, sugar, vanilla sugar, and a pinch of salt into a large bowl.
  2. 2. Beat the ingredients with a hand mixer until the mixture is creamy and fluffy.
  3. 3. Add an egg and mix it well until it is fully incorporated.
  4. 4. Mix flour, baking powder, cinnamon, and grated nutmeg in a separate small bowl.
  5. 5. Add the flour mixture to the butter mixture and knead everything together into a smooth dough.
  6. 6. Wrap the dough tightly in cling film.
  7. 7. Place the dough in the refrigerator for about 2 hours to chill thoroughly.
  8. 8. Preheat the oven to 180 degrees Celsius fan (convection).
  9. 9. Lightly flour a work surface and roll out the dough to a thickness of about 3 millimeters.
  10. 10. Cut small diamonds out of the dough using a pizza cutter or a cookie cutter.
  11. 11. Place the dough pieces on baking trays lined with baking paper.
  12. 12. Bake the cookies for about 10 to 12 minutes in the oven until golden brown.
  13. 13. Remove the trays and let the cookies cool briefly on the tray.
  14. 14. Spread raspberry jam on the bottom side of half of the cooled diamonds.
  15. 15. Place the remaining diamonds without jam on top to form sandwiches.
  16. 16. Lightly dust the finished cookies with powdered sugar before serving.
