🍰 Blackberry Pull-Apart Cake

Ingredients
- milk 250 ml
- yeast, fresh 42 g
- sugar 80 g
- butter 180 g
- eggs 2 pcs.
- wheat flour, Type 405 600 g
- salt pinch
- vanilla sugar 2 tbsp
- blackcurrants, fresh 250 g
- powdered sugar 1 tsp
Instructions
- 1. Warm the milk in a pot until it is lukewarm.
- 2. Crumble the yeast into the warm milk.
- 3. Stir in one teaspoon of sugar.
- 4. Let the mixture stand covered for about ten minutes.
- 5. Pour the yeast milk into a large bowl.
- 6. Add 60 grams of soft butter.
- 7. Add the eggs.
- 8. Mix everything with the flour.
- 9. Add 70 grams of sugar.
- 10. Season the mixture with a pinch of salt.
- 11. Knead the ingredients into a smooth dough.
- 12. Let the dough rise in a warm place, covered, for about one hour.
- 13. The dough should double in size.
- 14. Mix the remaining butter in a small bowl with vanilla sugar.
- 15. Wash the blackberries thoroughly.
- 16. Carefully remove the berries from the stems.
- 17. Preheat the oven to 200 degrees Celsius fan mode.
- 18. Knead the risen dough briefly again.
- 19. Lightly dust a work surface with flour.
- 20. Roll the dough out into a rectangle of about 40 by 50 centimeters.
- 21. Spread the vanilla butter evenly over the dough surface.
- 22. Cut the dough lengthwise into four strips.
- 23. Each strip should be about ten centimeters wide.
- 24. Cut the strips crosswise into pieces about eight centimeters in size.
- 25. Place one piece of dough on the work surface.
- 26. Distribute some blackberries on top.
- 27. Place another piece of dough on top.
- 28. Sprinkle this piece with berries as well.
- 29. Stack five to six pieces of dough on top of each other.
- 30. Place the stack upright in a greased loaf pan.
- 31. Ensure the top piece of dough lies with the butter side facing down.
- 32. Let the cake rise again, covered, for about twenty minutes.
- 33. Bake the cake in the oven for about 25 minutes.
- 34. The cake is ready when it is golden brown.
- 35. Loosely cover the surface with aluminum foil towards the end of the baking time.
- 36. This prevents the surface from becoming too dark.
- 37. Remove the cake from the oven.
- 38. Let the cake cool completely.
- 39. Dust the finished cake with powdered sugar.
- 40. Serve the blackberry pull-apart cake.
