  1. 1. Wash the lemon under running water.
  2. 2. Grate about one teaspoon of the lemon zest.
  3. 3. Cut the lemon in half.
  4. 4. Squeeze the juice from the lemon.
  5. 5. Wash the parsley thoroughly.
  6. 6. Remove the thick, coarse stems from the parsley.
  7. 7. Chop the parsley coarsely.
  8. 8. Place the yoghurt in a bowl.
  9. 9. Add the chopped parsley to the yoghurt.
  10. 10. Add the lemon juice to the bowl.
  11. 11. Add the lemon zest to the bowl.
  12. 12. Stir all ingredients in the bowl well.
  13. 13. Season the dressing with salt to taste.
  14. 14. Season the dressing with pepper to taste.
  15. 15. Pour the finished dressing over your salad.
  16. 16. Store the dressing in a closed jar in the refrigerator.
