🍽️ Chicken with spicy rub and fresh mango-cucumber salsa

Ingredients
- chicken breast fillets 600 g
- Jerk Rub spice 1 tsp
- organic limes 1 pcs
- mini cucumbers 2 pcs
- shallots 1 pcs
- mango 1 pcs
- chili, ground pinch
- salt pinch
- oil 1 tbsp
- butter 2 tbsp
- mint, fresh 10 g
Instructions
- 1. Rinse the chicken breast fillets under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut each fillet lengthwise into two equal pieces.
- 4. Take 1 teaspoon of Jerk Rub spice mix.
- 5. Massage the spice mix thoroughly into the meat with your hands.
- 6. Set the marinated meat aside for later use.
- 7. Cut the lime in half.
- 8. Squeeze the juice from the lime.
- 9. Wash the snack cucumbers thoroughly.
- 10. Trim the ends off the cucumbers.
- 11. Halve the cucumbers lengthwise.
- 12. Remove the seeds from the inside.
- 13. Slice the cucumbers diagonally into thin rounds.
- 14. Peel the shallot.
- 15. Cut the shallot into very fine rings.
- 16. Peel the mango.
- 17. Carefully separate the flesh from the pit.
- 18. Cut the flesh into approx. 1 cm cubes.
- 19. Place the mango cubes into a bowl.
- 20. Add the sliced cucumbers to the mango.
- 21. Add the shallot rings to the bowl.
- 22. Add the lime juice.
- 23. Add the chili peppers or chili flakes.
- 24. Season the mixture with salt.
- 25. Mix all ingredients in the bowl thoroughly.
- 26. Let the salsa marinate for at least 10 minutes.
- 27. Heat oil in a pan or grill pan on high heat.
- 28. Season the chicken pieces with salt.
- 29. Place the chicken into the hot fat.
- 30. Fry the meat on all sides for approx. 3 minutes until seared.
- 31. Cook until golden brown.
- 32. Reduce the heat to a low setting.
- 33. Add butter to the pan.
- 34. Cover the pan with a lid.
- 35. Let the chicken cook through for approx. 5 minutes.
- 36. Wash the mint under running water.
- 37. Dry the mint.
- 38. Pluck the leaves from the stems.
- 39. Chop the mint leaves finely.
- 40. Add the mint to the mango salsa.
- 41. Mix the salsa again well.
- 42. Season the salsa to taste with salt and pepper.
- 43. Plate the chicken.
- 44. Serve it with the mango salsa.
- 45. Drizzle some pan juices over the meat if desired.
