  1. 1. Rinse the chicken breast fillets under running water.
  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Cut each fillet lengthwise into two equal pieces.
  4. 4. Take 1 teaspoon of Jerk Rub spice mix.
  5. 5. Massage the spice mix thoroughly into the meat with your hands.
  6. 6. Set the marinated meat aside for later use.
  7. 7. Cut the lime in half.
  8. 8. Squeeze the juice from the lime.
  9. 9. Wash the snack cucumbers thoroughly.
  10. 10. Trim the ends off the cucumbers.
  11. 11. Halve the cucumbers lengthwise.
  12. 12. Remove the seeds from the inside.
  13. 13. Slice the cucumbers diagonally into thin rounds.
  14. 14. Peel the shallot.
  15. 15. Cut the shallot into very fine rings.
  16. 16. Peel the mango.
  17. 17. Carefully separate the flesh from the pit.
  18. 18. Cut the flesh into approx. 1 cm cubes.
  19. 19. Place the mango cubes into a bowl.
  20. 20. Add the sliced cucumbers to the mango.
  21. 21. Add the shallot rings to the bowl.
  22. 22. Add the lime juice.
  23. 23. Add the chili peppers or chili flakes.
  24. 24. Season the mixture with salt.
  25. 25. Mix all ingredients in the bowl thoroughly.
  26. 26. Let the salsa marinate for at least 10 minutes.
  27. 27. Heat oil in a pan or grill pan on high heat.
  28. 28. Season the chicken pieces with salt.
  29. 29. Place the chicken into the hot fat.
  30. 30. Fry the meat on all sides for approx. 3 minutes until seared.
  31. 31. Cook until golden brown.
  32. 32. Reduce the heat to a low setting.
  33. 33. Add butter to the pan.
  34. 34. Cover the pan with a lid.
  35. 35. Let the chicken cook through for approx. 5 minutes.
  36. 36. Wash the mint under running water.
  37. 37. Dry the mint.
  38. 38. Pluck the leaves from the stems.
  39. 39. Chop the mint leaves finely.
  40. 40. Add the mint to the mango salsa.
  41. 41. Mix the salsa again well.
  42. 42. Season the salsa to taste with salt and pepper.
  43. 43. Plate the chicken.
  44. 44. Serve it with the mango salsa.
  45. 45. Drizzle some pan juices over the meat if desired.
