  2. 2. Shake the herbs dry to remove excess water.
  3. 3. Carefully pluck the leaves off the tough stems.
  4. 4. Peel the garlic cloves of their skin.
  5. 5. Chop the garlic into coarse pieces.
  6. 6. Drain the capers in a sieve to remove the liquid.
  7. 7. Place the prepared herbs, chopped garlic, and capers into a tall blending jar.
  8. 8. Add the mustard and vinegar to the ingredients in the jar.
  9. 9. Blend the mixture finely until it has a uniform consistency.
  10. 10. Stir the olive oil slowly into the puree mixture.
  11. 11. Season the sauce finally with salt and pepper to taste.
  12. 12. Serve the finished Salsa Verde with dark meat or pasta.
