🥗 Chicken Rolls with Pepperoni Pasta Salad and Roasted Cashews

Ingredients
- onions, red 1 pc.
- chili pepper mix 8 pcs.
- oil 3 tbsp.
- salt pinch
- kritharaki pasta 500 g
- spring onions 1 bunch
- spinach leaves 250 g
- turkey breast fillet 600 g
- cashew nuts 4 tbsp.
- pepper, black ground pinch
Instructions
- 1. Peel the red onion and slice it into thin rings, keeping the root end intact.
- 2. Wash the pepperoni thoroughly and remove the stems.
- 3. Heat 1 tablespoon of oil in a pan over medium heat.
- 4. Sauté the onion rings and pepperoni for about 3 minutes, stirring occasionally.
- 5. Remove the vegetables from the pan and place them on a plate.
- 6. Rinse the pan briefly.
- 7. Bring about 2 liters of salted water to a boil in a pot.
- 8. Cook the kritharaki pasta in it for about 10 minutes until al dente.
- 9. Drain the pasta and rinse it with cold water.
- 10. Place the pasta in a bowl and set it aside.
- 11. Wash the spring onions and remove the root ends.
- 12. Slice the spring onions diagonally into thin rings.
- 13. Wash the spinach and dry it thoroughly.
- 14. Rinse the turkey steaks and pat them dry.
- 15. Halve the turkey steaks lengthwise.
- 16. Lightly pound the meat flat.
- 17. Season the meat to taste.
- 18. Place 1 pepperoni and 2 of the sautéed onion rings on each piece of meat.
- 19. Roll the meat up tightly.
- 20. Secure the rolls with wooden skewers.
- 21. Heat 1 tablespoon of oil in the pan over medium heat.
- 22. Sear the meat rolls on all sides for about 6 minutes.
- 23. Remove the skewers from the rolls.
- 24. Wrap the involtini in aluminum foil.
- 25. Set the wrapped rolls aside.
- 26. Heat 1 tablespoon of oil in the same pan over low heat.
- 27. Sauté the spring onion rings for about 2 minutes.
- 28. Add the remaining pepperoni and onion rings to the pan.
- 29. Cook everything for another 2 minutes.
- 30. Add the spinach to the pan and toss it briefly.
- 31. Mix the vegetables with the kritharaki pasta in the bowl.
- 32. Season the salad with salt and pepper.
- 33. Slice the involtini diagonally into bite-sized pieces.
- 34. Plate the meat rolls together with the lukewarm pasta salad.
- 35. Garnish the dish with the roasted cashew nuts.
