  1. 1. Wash the lemons under running water.
  2. 2. Finely grate about one teaspoon of zest from one lemon.
  3. 3. Slice one whole lemon into thin rounds.
  4. 4. Place the lemon slices in the fridge to chill.
  5. 5. Cut the remaining lemons in half.
  6. 6. Squeeze the juice out of the halved lemons.
  7. 7. Peel the ginger root.
  8. 8. Finely chop the peeled ginger.
  9. 9. Wash the mint under cold water.
  10. 10. Shake the mint dry.
  11. 11. Gently pluck the mint leaves from the stems.
  12. 12. Set aside the mint leaves for garnish.
  13. 13. Put the chopped ginger into a bowl.
  14. 14. Add the squeezed lemon juice to the bowl.
  15. 15. Add the grated lemon zest.
  16. 16. Add the sugar to the bowl.
  17. 17. Mix all ingredients in the bowl thoroughly.
  18. 18. Let the mixture steep for about one hour.
  19. 19. Pour the lemonade mixture through a fine sieve.
  20. 20. Fill the strained liquid into glasses.
  21. 21. Top up the drink with chilled sparkling water.
  22. 22. Garnish the glasses with the chilled lemon slices.
  23. 23. Add the reserved mint leaves as garnish.
  24. 24. Serve the lemonade immediately.
