🍰 Ginger-Lemon and Chocolate Tonka Energy Balls

Ingredients
- Soft apricots, dried and pitted 200 g
- Ginger, fresh 10 g
- Almonds, whole 200 g
- Lemon paste 1 tsp
- Lemon juice 2 tbsp
- Vanilla extract 1 tsp
- Oat flakes, fine 180 g
- Coconut flakes 150 g
- Soft dates, dried and pitted 200 g
- Tonka bean paste 1 tsp
- Hazelnut kernels, whole 100 g
- Cocoa powder 50 g
Instructions
- 1. Put the apricots into the blender.
- 2. Cut the ginger into coarse pieces.
- 3. Add the ginger, 100 g of almonds, lemon paste, lemon juice, and vanilla extract to the apricots in the blender.
- 4. Blend all ingredients into a mixture.
- 5. Add 90 g of oat flakes and two-thirds of the coconut flakes.
- 6. Blend the mixture only briefly.
- 7. Take the mixture out of the blender and put it into a large bowl.
- 8. Knead the mixture well.
- 9. Form about 20 balls from it.
- 10. Put the remaining coconut flakes onto a plate.
- 11. Roll the balls in the coconut flakes.
- 12. Put the dates and the espresso into the blender.
- 13. Crush the dates with the espresso.
- 14. Add tonka paste, hazelnuts, and 100 g of almonds.
- 15. Blend all ingredients.
- 16. Add 90 g of oat flakes.
- 17. Blend the mixture only briefly.
- 18. Take the mixture out of the blender and put it into a large bowl.
- 19. Knead the mixture well.
- 20. Form about 20 balls from it.
- 21. Spread cocoa powder onto a plate.
- 22. Roll the balls in the cocoa powder.
