🥗 Ginger-Orange Chicken Skewers with Carrot Salad

Ingredients
- chicken breast fillets 600 g
- oranges 1 pc
- ginger, fresh 10 g
- honey 1 tbsp
- salt pinch
- pepper, black ground pinch
- carrots 8 pc
- parsley, fresh 20 g
- mustard 1 tsp
- rapeseed oil 3 tbsp
- baguette 1 pc
Instructions
- 1. Preheat your grill.
- 2. Rinse the chicken and pat it dry with a kitchen towel.
- 3. Cut the meat into cubes of about 2 centimeters.
- 4. Wash the orange thoroughly.
- 5. Grate the orange peel finely.
- 6. Squeeze the juice from the orange.
- 7. Peel the ginger.
- 8. Chop the ginger finely.
- 9. Take a bowl and add 4 tablespoons of the fresh orange juice.
- 10. Add the grated orange peel.
- 11. Add honey, salt, and pepper to the bowl.
- 12. Mix the ingredients well together.
- 13. Place the chicken cubes into the marinade.
- 14. Wash the carrots.
- 15. Peel the carrots.
- 16. Grate the carrots coarsely.
- 17. Wash the parsley.
- 18. Dry the parsley.
- 19. Separate the parsley leaves from the stems.
- 20. Chop the parsley leaves finely.
- 21. Take a second bowl and add 2 tablespoons of orange juice.
- 22. Add mustard to the bowl.
- 23. Mix the juice and mustard.
- 24. Add 2 tablespoons of oil.
- 25. Season the dressing mixture with salt and pepper.
- 26. Set aside the chopped parsley.
- 27. Add the grated carrots to the dressing mixture.
- 28. Mix the carrots well with the dressing.
- 29. Sprinkle the chopped parsley over the salad.
- 30. Let the marinade drain from the chicken.
- 31. Pat the chicken dry.
- 32. Thread the chicken cubes onto skewers.
- 33. Brush the skewers with 1 tablespoon of oil.
- 34. Place the skewers on the grill.
- 35. Cook the skewers for about 2 minutes on the first side.
- 36. Turn the skewers.
- 37. Cook the skewers for about 2 minutes on the second side.
- 38. Arrange the chicken skewers on plates.
- 39. Serve the carrot salad alongside.
- 40. Serve baguette as a side dish.
