  1. 1. Bring the rice in a pot with about 450 ml of salted water to a boil and cook over medium heat for about 12 minutes, keeping the lid on.
  2. 2. Cut the onion in half, peel, and dice finely. Peel the garlic and ginger and chop finely. In a bowl, mix the minced meat well with the onion, garlic, ginger, and 2 tbsp of soy sauce. Form evenly sized balls from the meat mixture, about 3 cm in diameter.
  3. 3. Wash the spring onions, pat dry, remove the root ends, and slice into thin rings. Wash the carrot, peel, and slice into thin rounds. Wash the pepper, halve, remove the seeds and core, and cut into small cubes of about 1 cm.
  4. 4. Heat 2 tbsp of oil in a pan over high heat and fry the meatballs all around for about 10 minutes. Then reduce the heat and let the balls rest covered until further use.
  5. 5. Heat 1 tbsp of oil in another pan over medium heat and sauté the carrots together with the pepper for about 3 minutes. Add the cooked rice and continue frying everything for about 2 minutes until the liquid has evaporated.
  6. 6. Whisk the eggs with the spring onions and 2 tbsp of soy sauce in a bowl. Push the rice to the side so the bottom of the pan is visible, and pour in the eggs. Stir-fry the eggs with the rice for about 2 minutes, stirring constantly.
  7. 7. Season the fried egg rice with salt and pepper and serve on plates together with the meatballs. Enjoy your meal!
