  2. 2. Rinse the shrimp thoroughly and pat them dry with a kitchen towel.
  3. 3. Peel the ginger and finely chop it.
  4. 4. Cut the lime in half and squeeze out the juice.
  5. 5. In a bowl, mix the lime juice with honey, soy sauce, and the chopped ginger.
  6. 6. Add the shrimp to the marinade and set the bowl aside.
  7. 7. Peel the mango and cut the flesh from the pit.
  8. 8. Dice the mango flesh.
  9. 9. Wash the persimmon and cut it into quarters.
  10. 10. Remove the stem from the persimmon quarters and slice them into wedges.
  11. 11. Separate the salad leaves from the head.
  12. 12. Tear the salad leaves into bite-sized pieces.
  13. 13. Wash the torn salad leaves.
  14. 14. Heat the oil in a pan over high heat.
  15. 15. Remove the shrimp from the marinade.
  16. 16. Sauté the shrimp for about 3 minutes.
  17. 17. Season the shrimp with salt and pepper while frying.
  18. 18. Add the mango and persimmon pieces to the pan.
  19. 19. Deglaze the pan with the remaining marinade.
  20. 20. Toss the ingredients in the pan for about 1 minute.
