🥗 Fresh Indian Tomato-Cucumber Salad

Ingredients
- cucumbers 1 pc
- vine tomatoes 500 g
- onions, yellow 1 pc
- parsley, fresh 40 g
- organic lemons 1 pc
- olive oil 2 tbsp
- cumin 0.25 tsp
- salt pinch
- pepper, black ground pinch
- sugar pinch
Instructions
- 1. Peel the cucumber and cut it lengthwise into four long strips.
- 2. Remove the seeds from the cucumber strips and cut the flesh into bite-sized pieces.
- 3. Wash the tomatoes thoroughly under running water.
- 4. Cut the washed tomatoes into small cubes.
- 5. Cut the onion in half and remove the outer skin.
- 6. Slice the onion into very thin strips.
- 7. Rinse the parsley and pat it dry with a kitchen towel.
- 8. Pluck the parsley leaves from the tough stems.
- 9. Roughly chop the parsley leaves.
- 10. Rinse the lemon under hot water.
- 11. Finely grate about one teaspoon of the lemon zest.
- 12. Cut the lemon in half.
- 13. Squeeze the juice from the half lemon.
- 14. Add the olive oil, lemon juice, lemon zest, cumin, salt, pepper, and sugar to a large bowl.
- 15. Mix the dressing ingredients well together.
- 16. Adjust the seasoning of the dressing to taste if needed.
- 17. Add the prepared cucumbers, tomatoes, onions, and parsley to the bowl.
- 18. Toss the salad gently so that all ingredients are coated with the dressing.
- 19. Serve the salad immediately.
