  1. 1. Peel the cucumber and cut it lengthwise into four long strips.
  2. 2. Remove the seeds from the cucumber strips and cut the flesh into bite-sized pieces.
  3. 3. Wash the tomatoes thoroughly under running water.
  4. 4. Cut the washed tomatoes into small cubes.
  5. 5. Cut the onion in half and remove the outer skin.
  6. 6. Slice the onion into very thin strips.
  7. 7. Rinse the parsley and pat it dry with a kitchen towel.
  8. 8. Pluck the parsley leaves from the tough stems.
  9. 9. Roughly chop the parsley leaves.
  10. 10. Rinse the lemon under hot water.
  11. 11. Finely grate about one teaspoon of the lemon zest.
  12. 12. Cut the lemon in half.
  13. 13. Squeeze the juice from the half lemon.
  14. 14. Add the olive oil, lemon juice, lemon zest, cumin, salt, pepper, and sugar to a large bowl.
  15. 15. Mix the dressing ingredients well together.
  16. 16. Adjust the seasoning of the dressing to taste if needed.
  17. 17. Add the prepared cucumbers, tomatoes, onions, and parsley to the bowl.
  18. 18. Toss the salad gently so that all ingredients are coated with the dressing.
  19. 19. Serve the salad immediately.
