🍰 Honey Curd with Berry-Mango Salad

Ingredients
- mixed berries, frozen 300 g
- mango 1 pc.
- oranges 1 pc.
- honey 6 tbsp
- vanilla sugar 1 tsp
- mint, fresh 5 g
- quark 40% fat in total 500 g
- sour cream 100 g
Instructions
- 1. Let the berries thaw at room temperature.
- 2. Peel the mango and cut the flesh away from the pit.
- 3. Cut the mango flesh into small cubes.
- 4. Wash the orange thoroughly under running water.
- 5. Cut the orange in half.
- 6. Squeeze the juice from the orange halves.
- 7. Place the thawed berries and mango cubes into a bowl.
- 8. Mix the fruits in the bowl thoroughly.
- 9. Add the orange juice to the fruit mixture.
- 10. Add three tablespoons of honey to the mixture.
- 11. Add vanilla sugar to the mixture.
- 12. Stir everything well until it is evenly mixed.
- 13. Let the fruit mixture sit for at least 20 minutes.
- 14. Rinse the mint under cold water.
- 15. Shake the mint dry.
- 16. Pluck the mint leaves from the stems.
- 17. Place the curd and crème fraîche into a separate bowl.
- 18. Add the remaining honey to the curd mixture.
- 19. Stir the curd mixture until creamy and smooth.
- 20. Divide the curd mixture among several dessert plates.
- 21. Place the berry-mango salad on top of the curd.
- 22. Garnish the dish with the fresh mint leaves.
