  1. 1. Let the berries thaw at room temperature.
  2. 2. Peel the mango and cut the flesh away from the pit.
  3. 3. Cut the mango flesh into small cubes.
  4. 4. Wash the orange thoroughly under running water.
  5. 5. Cut the orange in half.
  6. 6. Squeeze the juice from the orange halves.
  7. 7. Place the thawed berries and mango cubes into a bowl.
  8. 8. Mix the fruits in the bowl thoroughly.
  9. 9. Add the orange juice to the fruit mixture.
  10. 10. Add three tablespoons of honey to the mixture.
  11. 11. Add vanilla sugar to the mixture.
  12. 12. Stir everything well until it is evenly mixed.
  13. 13. Let the fruit mixture sit for at least 20 minutes.
  14. 14. Rinse the mint under cold water.
  15. 15. Shake the mint dry.
  16. 16. Pluck the mint leaves from the stems.
  17. 17. Place the curd and crème fraîche into a separate bowl.
  18. 18. Add the remaining honey to the curd mixture.
  19. 19. Stir the curd mixture until creamy and smooth.
  20. 20. Divide the curd mixture among several dessert plates.
  21. 21. Place the berry-mango salad on top of the curd.
  22. 22. Garnish the dish with the fresh mint leaves.
