🍰 Honey-Cinnamon Cookies

Ingredients
- flour, Type 405 225 g
- cocoa powder 2 tbsp
- cinnamon 1 tsp
- baking powder 1 tsp
- sugar 75 g
- honey 2 tbsp
- butter 125 g
- eggs 1 pc.
- lemons 1 pc.
- powdered sugar 100 g
- food coloring, red 1 tsp
Instructions
- 1. Mix flour, cocoa powder, cinnamon, baking powder, sugar, and honey in a bowl.
- 2. Add cold butter and one egg.
- 3. Knead the ingredients by hand until you have a smooth dough.
- 4. Wrap the dough in cling film.
- 5. Let the dough rest in the refrigerator for about 1 hour.
- 6. Preheat the oven to 190 °C (top and bottom heat).
- 7. Line a baking tray with baking paper.
- 8. Lightly dust a work surface with flour.
- 9. Roll out the dough on the floured surface to a thickness of about 0.5 cm.
- 10. Cut out the cookies using a cookie cutter.
- 11. Place the cookies on the baking tray with some space between them.
- 12. Bake the cookies for about 10 minutes until lightly brown.
- 13. Carefully remove the cookies from the oven.
- 14. Let the cookies cool down.
- 15. Squeeze one lemon.
- 16. Sift powdered sugar into a bowl.
- 17. Stir the powdered sugar with 2 tablespoons of lemon juice to make a thick glaze.
- 18. Color half of the sugar glaze red.
- 19. Put the glaze into a freezer bag.
- 20. Seal the bag.
- 21. Cut off a small corner of the bag.
- 22. Decorate the cookies artistically with the glaze.
- 23. Let the glaze dry.
- 24. Serve the cookies.
