🍰 Homemade Croissants

Ingredients
- milk 150 ml
- yeast, fresh 0.5 pcs
- sugar 60 g
- butter 100 g
- salt pinch
- eggs 2 pcs
- wheat flour, type 405 500 g
- whipping cream 1 tbsp
Instructions
- 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into the lukewarm milk.
- 3. Dissolve the yeast together with 1 tablespoon of sugar in the milk.
- 4. Cover the pot and let the yeast milk rest for about 10 minutes.
- 5. Mix the yeast milk with the remaining sugar in a large bowl.
- 6. Add the butter, salt, 1 egg, and flour to the bowl.
- 7. Knead everything into a smooth dough.
- 8. Cover the dough and let it rise for about 1 hour.
- 9. Dust a work surface with a little flour.
- 10. Roll the dough out into a rectangle measuring 24 x 36 cm and 0.5 cm thick.
- 11. Cut the rectangle into 6 squares, each 12 x 12 cm in size.
- 12. Cut each square diagonally to create two triangles.
- 13. Gently shape the triangles to make them more pliable.
- 14. Roll the triangles into croissants starting from the narrow side.
- 15. Place the croissants on a baking sheet lined with baking paper.
- 16. Cover the croissants and let them rise in a warm place for approx. 30 minutes.
- 17. Preheat the oven to 200 °C (convection).
- 18. Separate the remaining egg into a small bowl.
- 19. Whisk the egg yolk with the cream.
- 20. Brush the croissants with the egg yolk and cream mixture.
- 21. Bake the croissants in the preheated oven for approx. 15–20 minutes.
- 22. Remove the croissants when they are golden brown.
