  1. 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Crumble the yeast into the lukewarm milk.
  3. 3. Dissolve the yeast together with 1 tablespoon of sugar in the milk.
  4. 4. Cover the pot and let the yeast milk rest for about 10 minutes.
  5. 5. Mix the yeast milk with the remaining sugar in a large bowl.
  6. 6. Add the butter, salt, 1 egg, and flour to the bowl.
  7. 7. Knead everything into a smooth dough.
  8. 8. Cover the dough and let it rise for about 1 hour.
  9. 9. Dust a work surface with a little flour.
  10. 10. Roll the dough out into a rectangle measuring 24 x 36 cm and 0.5 cm thick.
  11. 11. Cut the rectangle into 6 squares, each 12 x 12 cm in size.
  12. 12. Cut each square diagonally to create two triangles.
  13. 13. Gently shape the triangles to make them more pliable.
  14. 14. Roll the triangles into croissants starting from the narrow side.
  15. 15. Place the croissants on a baking sheet lined with baking paper.
  16. 16. Cover the croissants and let them rise in a warm place for approx. 30 minutes.
  17. 17. Preheat the oven to 200 °C (convection).
  18. 18. Separate the remaining egg into a small bowl.
  19. 19. Whisk the egg yolk with the cream.
  20. 20. Brush the croissants with the egg yolk and cream mixture.
  21. 21. Bake the croissants in the preheated oven for approx. 15–20 minutes.
  22. 22. Remove the croissants when they are golden brown.
