🍰 Raspberry Yogurt Mousse with Mango Sauce

Ingredients
- gelatin leaves 4 pcs
- yogurt, plain 325 g
- brown sugar 50 g
- orange juice 80 ml
- raspberries, fresh 200 g
- whipping cream 60 g
- eggs 2 pcs
- mango 1 pcs
- organic limes 1 pcs
Instructions
- 1. Soak the gelatin leaves in cold water for a few minutes.
- 2. Mix the yogurt, sugar, and two tablespoons of orange juice well together in a separate bowl.
- 3. Heat two tablespoons of orange juice in a small saucepan.
- 4. Squeeze the soaked gelatin and dissolve it in the warm orange juice.
- 5. Stir the gelatin mixture into the yogurt mixture.
- 6. Rinse the raspberries and remove any bad berries.
- 7. Carefully halve the raspberries.
- 8. Fold the raspberries into the yogurt mixture.
- 9. Place the yogurt mixture in the refrigerator for about one hour until it is slightly firm.
- 10. Whip the cream stiff in a tall container using a hand mixer.
- 11. Separate the eggs and use the yolks for something else.
- 12. Whip the egg whites stiff as well.
- 13. Fold the whipped cream and egg whites into the yogurt mixture.
- 14. Let the mousse set in the refrigerator for about two hours.
- 15. Peel the mango and cut the flesh away from the pit.
- 16. Dice the mango flesh.
- 17. Halve a lime and squeeze out the juice.
- 18. Puree the mango in a tall container together with the lime juice and the remaining orange juice.
- 19. Scoop small quenelles from the raspberry yogurt mousse using a spoon.
- 20. Plate the mousse with the mango sauce on a plate.
