  1. 1. Soak the gelatin leaves in cold water for a few minutes.
  2. 2. Mix the yogurt, sugar, and two tablespoons of orange juice well together in a separate bowl.
  3. 3. Heat two tablespoons of orange juice in a small saucepan.
  4. 4. Squeeze the soaked gelatin and dissolve it in the warm orange juice.
  5. 5. Stir the gelatin mixture into the yogurt mixture.
  6. 6. Rinse the raspberries and remove any bad berries.
  7. 7. Carefully halve the raspberries.
  8. 8. Fold the raspberries into the yogurt mixture.
  9. 9. Place the yogurt mixture in the refrigerator for about one hour until it is slightly firm.
  10. 10. Whip the cream stiff in a tall container using a hand mixer.
  11. 11. Separate the eggs and use the yolks for something else.
  12. 12. Whip the egg whites stiff as well.
  13. 13. Fold the whipped cream and egg whites into the yogurt mixture.
  14. 14. Let the mousse set in the refrigerator for about two hours.
  15. 15. Peel the mango and cut the flesh away from the pit.
  16. 16. Dice the mango flesh.
  17. 17. Halve a lime and squeeze out the juice.
  18. 18. Puree the mango in a tall container together with the lime juice and the remaining orange juice.
  19. 19. Scoop small quenelles from the raspberry yogurt mousse using a spoon.
  20. 20. Plate the mousse with the mango sauce on a plate.
