🍰 Raspberry Strawberry Parfait

Ingredients
- Raspberries, fresh 250 g
- Strawberries 250 g
- Whipping cream 400 ml
- Egg yolks 4 pcs.
- Icing sugar 100 g
- Vanilla sugar 20 g
- Sour cream Greek style 150 g
- Sugar 20 g
Instructions
- 1. Thoroughly wash the raspberries and strawberries.
- 2. Gently pat the berries dry with a kitchen towel.
- 3. Remove the green leafy tops from the strawberries.
- 4. Cut the strawberries into halves or quarters depending on their size.
- 5. Line a loaf pan with cling film.
- 6. Distribute 100 grams of raspberries and 100 grams of strawberries evenly in the pan.
- 7. Insert the whisk attachment into your appliance's mixing bowl.
- 8. Whip the cream stiff by mixing it for 1 minute and 30 seconds on speed 4.
- 9. Make sure not to insert the measuring cup during this process.
- 10. Remove the whisk attachment and transfer the cream into a separate bowl.
- 11. Thoroughly clean the mixing bowl and the whisk attachment.
- 12. Insert the whisk attachment back into the clean mixing bowl.
- 13. Add the egg yolks, sifted powdered sugar, and 10 grams of vanilla sugar to the bowl.
- 14. Whip the mixture until creamy by mixing it for 3 minutes on speed 3 at 70 degrees Celsius.
- 15. Insert the measuring cup during this process.
- 16. Add the yogurt to the egg yolk mixture.
- 17. Mix the yogurt in for 20 seconds on speed 2.
- 18. Add the prepared cream to the mixture.
- 19. Fold the cream in for 20 seconds on speed 2.
- 20. Remove the whisk attachment from the bowl.
- 21. Pour the cream evenly over the fruits in the pan.
- 22. Freeze the parfait in the freezer for 12 hours.
- 23. Clean the mixing bowl after use.
- 24. Add the remaining fruits, sugar, and vanilla sugar to the mixing bowl.
- 25. Bring the mixture to a boil on speed 2 at 90 degrees Celsius for 10 minutes.
- 26. Make sure not to insert the measuring cup during this process.
- 27. Puree the hot fruit mixture for 30 seconds using the puree function.
- 28. Insert the measuring cup during this process.
- 29. Transfer the puree mixture into a pot or a bowl.
- 30. Strain the mixture through a fine sieve to remove the seeds.
- 31. Let the fruit sauce cool down completely.
- 32. Take the parfait out of the freezer 10 minutes before serving.
- 33. Slice the parfait.
- 34. Pour the cooled fruit sauce over the slices.
- 35. Enjoy your meal!
- 36. Tip: You can also use frozen fruits if fresh ones are not available.
