  1. 1. Wash the raspberries thoroughly and let them drain well.
  2. 2. Wash the apricots, halve them, and remove the pits.
  3. 3. Cut the pitted apricots into small quarters.
  4. 4. Place the raspberries and apricot pieces into a tall container.
  5. 5. Puree the fruits with an immersion blender until smooth.
  6. 6. Strain the puree through a fine sieve to remove any coarse bits.
  7. 7. Stir in powdered sugar and vanilla sugar into the strained puree.
  8. 8. Halve a lime and squeeze out the juice.
  9. 9. Mix the lime juice with the fruit puree.
  10. 10. Pour the mixture into a shallow dish.
  11. 11. Place the dish in the freezer.
  12. 12. Stir the mixture with a fork as soon as it starts to freeze.
  13. 13. Repeat the stirring several times to prevent large ice crystals from forming.
  14. 14. Let the sorbet freeze completely.
  15. 15. Take the sorbet out of the freezer about 30 minutes before serving.
