🍰 Fruity Raspberry-Apricot Ice

Ingredients
- Raspberries, fresh 250 g
- Apricots, fresh 500 g
- Icing sugar 80 g
- Vanilla sugar 20 g
- Organic limes 0.5 pcs.
- Waffles 2 pcs.
Instructions
- 1. Wash the raspberries thoroughly and let them drain well.
- 2. Wash the apricots, halve them, and remove the pits.
- 3. Cut the pitted apricots into small quarters.
- 4. Place the raspberries and apricot pieces into a tall container.
- 5. Puree the fruits with an immersion blender until smooth.
- 6. Strain the puree through a fine sieve to remove any coarse bits.
- 7. Stir in powdered sugar and vanilla sugar into the strained puree.
- 8. Halve a lime and squeeze out the juice.
- 9. Mix the lime juice with the fruit puree.
- 10. Pour the mixture into a shallow dish.
- 11. Place the dish in the freezer.
- 12. Stir the mixture with a fork as soon as it starts to freeze.
- 13. Repeat the stirring several times to prevent large ice crystals from forming.
- 14. Let the sorbet freeze completely.
- 15. Take the sorbet out of the freezer about 30 minutes before serving.
- 16. Whip the thawed sorbet creamy with the immersion blender.
- 17. Shape the sorbet into nice balls.
- 18. Serve the ice cream together with waffles.
