🍳 Savory Herb Pancakes with Ham

Ingredients
- Eggs 4 pcs
- Salt pinch
- Milk 300 ml
- Wheat flour, Type 405 250 g
- Emmentaler grated 100 g
- Herbs of Provence, dried 10 g
- Onions, yellow 2 pcs
- Butter 4 tbsp
- Black Forest ham 125 g
- Pepper, black ground pinch
Instructions
- 1. Separate the eggs. Remove the egg whites and place them in a tall container.
- 2. Beat the egg whites with a hand mixer until stiff.
- 3. Place the egg yolks in a separate bowl.
- 4. Whisk the egg yolks with a pinch of salt until frothy.
- 5. Stir in milk and flour alternately into the yolk mixture.
- 6. Gently fold the stiffly beaten egg whites into the mixture.
- 7. Mix the batter with grated Emmental cheese and Herbs de Provence.
- 8. Halve the onions and peel them.
- 9. Dice the onions finely.
- 10. Melt butter in a frying pan over medium heat.
- 11. Fry the onions together with the ham until crispy.
- 12. Season the mixture with pepper.
- 13. Heat one tablespoon of butter in another frying pan over medium heat.
- 14. Pour half of the batter into the pan.
- 15. Bake the pancake for about two to three minutes on each side until golden brown.
- 16. Shred the finished pancake into pieces using two forks.
- 17. Keep the pieces warm.
- 18. Bake the remaining batter in the same way.
- 19. Arrange the pancake pieces on plates.
- 20. Serve the pancakes with the fried ham.
