  1. 1. Separate the eggs. Remove the egg whites and place them in a tall container.
  2. 2. Beat the egg whites with a hand mixer until stiff.
  3. 3. Place the egg yolks in a separate bowl.
  4. 4. Whisk the egg yolks with a pinch of salt until frothy.
  5. 5. Stir in milk and flour alternately into the yolk mixture.
  6. 6. Gently fold the stiffly beaten egg whites into the mixture.
  7. 7. Mix the batter with grated Emmental cheese and Herbs de Provence.
  8. 8. Halve the onions and peel them.
  9. 9. Dice the onions finely.
  10. 10. Melt butter in a frying pan over medium heat.
  11. 11. Fry the onions together with the ham until crispy.
  12. 12. Season the mixture with pepper.
  13. 13. Heat one tablespoon of butter in another frying pan over medium heat.
  14. 14. Pour half of the batter into the pan.
  15. 15. Bake the pancake for about two to three minutes on each side until golden brown.
  16. 16. Shred the finished pancake into pieces using two forks.

  18. 18. Bake the remaining batter in the same way.

  20. 20. Serve the pancakes with the fried ham.
