🍽️ Savory Potato and Apple Roll

Ingredients
- potatoes, starchy 800 g
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- parsley, fresh 15 g
- smoked tofu 200 g
- apples, red 1 pc.
- oil 2 tbsp
- soy yogurt 150 g
- marjoram, dried 1 tsp
- salt pinch
- pepper, black ground pinch
- puff pastry 2 pcs.
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Wash the potatoes and peel them.
- 3. Slice the potatoes thinly or shred them.
- 4. Place the potato slices in a bowl with 3 liters of cold water for 10 minutes.
- 5. Halve the onions and peel them.
- 6. Dice the onions finely.
- 7. Peel the garlic.
- 8. Dice the garlic finely.
- 9. Wash the parsley and shake it dry.
- 10. Pick the parsley leaves off the stems.
- 11. Chop the parsley leaves coarsely.
- 12. Cut the smoked tofu into small cubes.
- 13. Wash the apple.
- 14. Remove the stem and core from the apple.
- 15. Cut the apple into approx. 1 cm cubes.
- 16. Heat 2 tablespoons of oil in a pan.
- 17. Sauté the onions until translucent.
- 18. Add the smoked tofu cubes, apple, and parsley to the onions in the pan.
- 19. Sauté the ingredients briefly.
- 20. Drain the potatoes in a colander.
- 21. Squeeze the potatoes dry with your hands.
- 22. Add the potatoes to the sautéed onions in the pan.
- 23. Fry the potatoes for approx. 5 minutes.
- 24. Add the soy yogurt, garlic, and marjoram.
- 25. Season the filling with salt and pepper.
- 26. Unroll the puff pastry.
- 27. Spread the potato filling on the pastry.
- 28. Leave a border of approx. 5 cm free.
- 29. Fold in the short sides of the pastry.
- 30. Roll up the puff pastry tightly.
- 31. Place the roll with the overlapping side down on a baking sheet lined with baking paper.
- 32. Bake the strudel for approx. 25 minutes until golden brown.
- 33. Take the strudel out of the oven.
- 34. Serve the strudel on plates.
