  1. 1. Preheat the oven to 180 degrees Celsius fan-forced.
  2. 2. Wash the potatoes and peel them.
  3. 3. Slice the potatoes thinly or shred them.
  4. 4. Place the potato slices in a bowl with 3 liters of cold water for 10 minutes.
  5. 5. Halve the onions and peel them.
  6. 6. Dice the onions finely.
  7. 7. Peel the garlic.
  8. 8. Dice the garlic finely.
  9. 9. Wash the parsley and shake it dry.
  10. 10. Pick the parsley leaves off the stems.
  11. 11. Chop the parsley leaves coarsely.
  12. 12. Cut the smoked tofu into small cubes.
  13. 13. Wash the apple.
  14. 14. Remove the stem and core from the apple.
  15. 15. Cut the apple into approx. 1 cm cubes.
  16. 16. Heat 2 tablespoons of oil in a pan.
  17. 17. Sauté the onions until translucent.
  18. 18. Add the smoked tofu cubes, apple, and parsley to the onions in the pan.
  19. 19. Sauté the ingredients briefly.
  20. 20. Drain the potatoes in a colander.
  21. 21. Squeeze the potatoes dry with your hands.
  22. 22. Add the potatoes to the sautéed onions in the pan.
  23. 23. Fry the potatoes for approx. 5 minutes.
  24. 24. Add the soy yogurt, garlic, and marjoram.
  25. 25. Season the filling with salt and pepper.
  26. 26. Unroll the puff pastry.
  27. 27. Spread the potato filling on the pastry.
  28. 28. Leave a border of approx. 5 cm free.
  29. 29. Fold in the short sides of the pastry.
  30. 30. Roll up the puff pastry tightly.
  31. 31. Place the roll with the overlapping side down on a baking sheet lined with baking paper.
  32. 32. Bake the strudel for approx. 25 minutes until golden brown.
  33. 33. Take the strudel out of the oven.
  34. 34. Serve the strudel on plates.
