🍽️ Savory Waffle Sandwiches with Salmon and Avocado

Ingredients
- dill, fresh 10 g
- lemons 1 pc
- oil 80 ml
- buttermilk 500 ml
- eggs 2 pcs
- spelt flour, type 630 260 g
- baking powder 1 tbsp
- salt pinch
- avocados 2 pcs
- onions, red 1 pc
- crème fraîche 100 ml
- pepper, black ground pinch
- smoked salmon 150 g
Instructions
- 1. Wash the dill thoroughly and pat it dry.
- 2. Pluck off the fine dill tips and chop them finely.
- 3. Wash the lemon thoroughly.
- 4. Grate the lemon zest until you have 1 teaspoon of zest.
- 5. Cut the rest of the lemon into wedges.
- 6. Add oil, buttermilk, the lemon zest, and the eggs to a bowl.
- 7. Whisk these ingredients well together.
- 8. Add flour, baking powder, and a pinch of salt to the bowl.
- 9. Fold everything in gently until a smooth batter forms.
- 10. Preheat the waffle iron.
- 11. Lightly grease the waffle iron.
- 12. Pour one ladleful of batter into the mold.
- 13. Bake the waffles for about 2 to 3 minutes until golden brown.
- 14. Halve the avocados and remove the pits.
- 15. Scoop out the avocado flesh with a spoon.
- 16. Slice the avocado flesh into thin slices.
- 17. Peel the onion.
- 18. Slice the onion into thin rings.
- 19. Place the crème fraîche in a separate bowl.
- 20. Stir the chopped dill into the crème fraîche.
- 21. Season the mixture with a little salt and pepper.
- 22. Spread the dill crème fraîche mixture onto the finished waffles.
- 23. Top the waffles with avocado and salmon.
- 24. Place the onion rings on top of the filling.
- 25. Cover the sandwich with another waffle.
- 26. Secure the waffle sandwich with a toothpick if desired.
- 27. Serve the sandwich with the lemon wedges.
