🍽️ Colorful Vegetable Tart with Butter Pastry

Ingredients
- butter 120 g
- salt pinch
- wheat flour, Type 405 300 g
- eggs 3 pcs.
- baking powder 1 tsp
- zucchini 1 pcs.
- carrots 3 pcs.
- parsnips 3 pcs.
- beetroot, pre-cooked 300 g
- thyme, fresh 10 g
- crème fraîche 200 g
- Emmental grated 100 g
- pepper, black ground pinch
- olive oil 1 tbsp
Instructions
- 1. Cut the cold butter into large cubes.
- 2. Place the butter cubes, salt, flour, one egg, and baking powder in a bowl.
- 3. Quickly mix the ingredients into a smooth dough.
- 4. If the dough is too dry, add 4 to 5 tablespoons of cold water.
- 5. Grease a quiche or tart pan with a 26 cm diameter.
- 6. Press the dough into the pan using lightly floured fingers.
- 7. Form a rim that is about 3 cm high.
- 8. Place the dough in the refrigerator for at least 1 hour.
- 9. Preheat the oven to 180 °C using top and bottom heat.
- 10. Wash the zucchini and trim off the ends.
- 11. Peel the carrots and parsnips and remove the ends as well.
- 12. Slice the vegetables lengthwise into thin strips using a vegetable peeler or mandoline.
- 13. Bring 3 liters of salted water to a boil in a pot.
- 14. Cook the zucchini, carrots, and parsnips one after the other in the boiling water for about 2 minutes.
- 15. Remove the vegetables from the pot using a slotted spoon.
- 16. Rinse the vegetables under cold water to stop the cooking process.
- 17. Rinse the thyme and shake it dry.
- 18. Pluck the thyme leaves from the stems and chop them finely.
- 19. Mix crème fraîche, one egg, grated Emmental cheese, and the chopped thyme in a bowl.
- 20. Season the mixture with salt and pepper.
- 21. Spread the cream mixture evenly over the chilled dough.
- 22. Arrange the zucchini, carrot, parsnip, and beetroot slices in a spiral pattern from the outside in.
- 23. Fill the tart completely with the vegetables.
- 24. Brush the vegetables lightly with oil.
- 25. Bake the tart in the preheated oven for about 50 to 60 minutes.
- 26. Serve the tart hot or warm.
