🍰 Savory Pizza Muffins

Ingredients
- red bell pepper 1 pc.
- yellow bell pepper 1 pc.
- red onions 1 pc.
- cherry tomatoes 150 g
- olive oil 2 tbsp
- dry red wine 100 ml
- thyme, chopped 0.5 tsp
- salt pinch
- black ground pepper pinch
- sour cream 200 g
- Gouda, grated 150 g
- eggs 2 pc.
- pizza dough with tomato sauce 1 pc.
Instructions
- 1. Preheat the oven to 200 degrees Celsius fan mode.
- 2. Wash the bell peppers thoroughly.
- 3. Cut the bell peppers in half and remove the stem and seeds.
- 4. Dice the bell pepper flesh into small cubes.
- 5. Halve the onion and peel it.
- 6. Slice the onion into thin rings.
- 7. Wash the tomatoes.
- 8. Cut the tomatoes in half.
- 9. Heat oil in a pan over high heat.
- 10. Sauté the bell pepper cubes and onion rings for about 3 minutes.
- 11. Stir occasionally.
- 12. Deglaze the pan with red wine.
- 13. Season the mixture with thyme, salt, and pepper.
- 14. Let the vegetables simmer for 5 minutes until soft.
- 15. Add the tomatoes in the last 2 minutes.
- 16. Remove the vegetables from the pan.
- 17. Let the vegetables cool down slightly.
- 18. Mix sour cream, Gouda, and egg in a bowl.
- 19. Season the cream with salt and pepper.
- 20. Roll out the dough flat.
- 21. Use a glass to cut out 12 circles from the dough.
- 22. Grease a muffin tin.
- 23. Place the dough circles into the muffin cups.
- 24. Distribute the egg mixture evenly into the cups.
- 25. Spread the prepared bell pepper mixture on top.
- 26. Bake the muffins in the oven for 18 to 20 minutes.
- 27. Remove them when they are golden brown.
- 28. Serve the muffins warm or cold.
