  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Roll out the puff pastry sheets flat.
  3. 3. Spread pesto over one puff pastry sheet.
  4. 4. Sprinkle grated Parmesan cheese over the pesto.
  5. 5. Place the second puff pastry sheet on top.
  6. 6. Cut the pastry into strips about 3 centimeters wide.
  7. 7. Twist two strips together.
  8. 8. Halve the twisted strips.
  9. 9. Twist the ends in the upper third twice to form ears.
  10. 10. Place the bunnies on a baking sheet lined with baking paper.
  11. 11. Separate an egg and whisk only the yolk in a bowl.
  12. 12. Brush the bunnies with the egg yolk.
  13. 13. Bake the bunnies for approx. 15 minutes until golden brown.
  14. 14. Wash the parsley and shake it dry.
  15. 15. Pluck the parsley leaves from the stems.
  16. 16. Chop the parsley leaves roughly.
  17. 17. Mix cream cheese, parsley, salt, and pepper in a bowl.
  18. 18. Fill the cream cheese mixture into a piping bag.
  19. 19. Remove the bunnies from the oven and let them cool.
  20. 20. Fill the loop of each bunny with the cream cheese mixture.
  21. 21. Serve the bunnies and enjoy.
