🍽️ Savory French Toast with Plum Chutney

Ingredients
- plums 600 g
- onions, yellow 2 pcs
- rapeseed oil 2 tbsp
- red wine, dry 100 ml
- salt pinch
- pepper, black ground pinch
- mustard 1 tsp
- chili, ground pinch
- parsley, fresh 40 g
- eggs 2 pcs
- milk 75 ml
- multigrain toast bread 4 slices
- butter 2 tbsp
- Emmental cheese, grated 40 g
Instructions
- 1. Rinse the plums thoroughly under running water.
- 2. Cut the plums in half and remove the pits.
- 3. Cut the plums into small pieces.
- 4. Cut the onions in half and remove the outer skin.
- 5. Cut the onions into strips about one centimeter wide.
- 6. Heat the oil in a pan over medium heat.
- 7. Sauté the plums and onions in the pan for two to three minutes.
- 8. Deglaze the pan with the wine.
- 9. Season the mixture with salt, pepper, mustard, and chili.
- 10. Let the mixture simmer gently for about twelve minutes.
- 11. Check if the ingredients are soft and remove the pan from the heat when they are.
- 12. Wash the parsley thoroughly under running water.
- 13. Dry the parsley completely using a kitchen towel or a salad spinner.
- 14. Pluck the parsley leaves from the stems.
- 15. Finely chop the parsley leaves.
- 16. Place the chopped parsley into a bowl.
- 17. Add the eggs to the bowl with the parsley.
- 18. Add the milk to the bowl.
- 19. Season the mixture with salt and pepper.
- 20. Whisk the ingredients in the bowl well together.
- 21. Dip a toast slice into the egg-parsley mixture for about two minutes.
- 22. Turn the toast slice so it absorbs liquid on both sides.
- 23. Heat the butter in a separate pan over medium heat.
- 24. Fry the soaked toast slices for about four to five minutes on one side.
- 25. Turn the toast slices and fry them for another four to five minutes on the other side.
- 26. Spread grated Emmental cheese on the fried toast slices.
- 27. Cover the pan and bake the toast slices for one to two minutes.
- 28. Check if the cheese has melted.
- 29. Serve the French toast with the plum chutney.
