🍽️ Oven Herring with Tomato and Onion Vegetable

Ingredients
- Herring fillet 600 g
- Salt pinch
- Pepper, black ground pinch
- Lemon 1 pc.
- Potatoes, mostly waxy 1 kg
- Onions, red 2 pc.
- Garlic cloves 4 pc.
- Spring onions 1 bunch
- Cherry tomatoes 750 g
- Olive oil 4 tbsp
- Herbs of Provence, dried 4 tbsp
Instructions
- 1. Let the herring fillets thaw overnight in the refrigerator.
- 2. Wash the lemon thoroughly, cut it in half, and squeeze out the juice.
- 3. Rinse the herrings thoroughly and pat them dry with a kitchen towel.
- 4. Season the fillets with salt, pepper, and lemon juice.
- 5. Set the seasoned herrings aside to let the flavors infuse.
- 6. Preheat the oven to 175 °C (top and bottom heat).
- 7. Wash the potatoes, peel them, and cut them into cubes.
- 8. Bring the potato cubes to a boil in a pot of salted water.
- 9. Cook the potatoes for about 10 minutes.
- 10. Cut the onions in half and peel them.
- 11. Cut the peeled onions into wedges.
- 12. Peel the garlic and slice it thinly.
- 13. Wash the spring onions and remove the root ends.
- 14. Cut the spring onions into pieces about 3 cm long.
- 15. Wash the tomatoes and cut them in half.
- 16. Heat a pan on the highest setting.
- 17. Sauté the onions, garlic, and spring onions for about 4 minutes.
- 18. Add the tomatoes to the pan.
- 19. Season the vegetables with salt, pepper, and herbs de Provence.
- 20. Grease a baking dish.
- 21. Place the vegetables and potatoes into the greased baking dish.
- 22. Place the herring fillets on top of the vegetables.
- 23. Bake everything for about 25 minutes in the oven.
- 24. Serve the herrings on the tomato-onion vegetable dish slightly cooled.
