  1. 1. Let the herring fillets thaw overnight in the refrigerator.
  2. 2. Wash the lemon thoroughly, cut it in half, and squeeze out the juice.
  3. 3. Rinse the herrings thoroughly and pat them dry with a kitchen towel.
  4. 4. Season the fillets with salt, pepper, and lemon juice.
  5. 5. Set the seasoned herrings aside to let the flavors infuse.
  6. 6. Preheat the oven to 175 °C (top and bottom heat).
  7. 7. Wash the potatoes, peel them, and cut them into cubes.
  8. 8. Bring the potato cubes to a boil in a pot of salted water.
  9. 9. Cook the potatoes for about 10 minutes.
  10. 10. Cut the onions in half and peel them.
  11. 11. Cut the peeled onions into wedges.
  12. 12. Peel the garlic and slice it thinly.
  13. 13. Wash the spring onions and remove the root ends.
  14. 14. Cut the spring onions into pieces about 3 cm long.
  15. 15. Wash the tomatoes and cut them in half.
  16. 16. Heat a pan on the highest setting.
  17. 17. Sauté the onions, garlic, and spring onions for about 4 minutes.
  18. 18. Add the tomatoes to the pan.
  19. 19. Season the vegetables with salt, pepper, and herbs de Provence.
  20. 20. Grease a baking dish.
  21. 21. Place the vegetables and potatoes into the greased baking dish.
  22. 22. Place the herring fillets on top of the vegetables.
  23. 23. Bake everything for about 25 minutes in the oven.
  24. 24. Serve the herrings on the tomato-onion vegetable dish slightly cooled.
