🍽️ Autumn Stew with Grapes

Ingredients
- Vegetable onions 1 pc
- Rosemary, fresh 20 g
- Pork ham goulash 1 kg
- Sunflower oil 2 tbsp
- Salt pinch
- Pepper, black ground pinch
- Red wine, dry 200 ml
- Vegetable broth 300 ml
- Grapes, dark 300 g
- Gnocchi, fresh 800 g
Instructions
- 1. Halve the onion and peel it. Cut it into coarse cubes.
- 2. Thoroughly wash the rosemary and shake it dry. Strip the needles from the stems and chop them finely.
- 3. Rinse the meat and pat it dry with kitchen paper.
- 4. Heat the oil in a pot over high heat.
- 5. Sear the meat in batches for about 4 minutes.
- 6. Remove the seared meat from the pot and set it aside.
- 7. Sauté the onion cubes in the remaining fat for about 2 minutes.
- 8. Return the meat and the chopped rosemary to the pot.
- 9. Season everything with salt and pepper.
- 10. Deglaze the dish with red wine.
- 11. Let the mixture come to a brief boil.
- 12. Pour in the broth.
- 13. Place the lid on the pot.
- 14. Simmer the stew over medium heat for about 90 minutes.
- 15. Rinse the grapes.
- 16. Halve the grapes.
- 17. Add the halved grapes to the pot.
- 18. Season the stew to taste.
- 19. Bring about 4 liters of salted water to a boil in another pot.
- 20. Cook the gnocchi in the boiling water for about 3 minutes.
- 21. Remove the gnocchi from the water as soon as they float to the surface.
- 22. Drain the gnocchi in a colander.
- 23. Serve the stew together with the gnocchi.
