  1. 1. Thoroughly wash the lemon under running water.
  2. 2. Cut the lemon in half and squeeze out the juice.
  3. 3. Wash the apples thoroughly.
  4. 4. Peel the apples completely.
  5. 5. Cut the apples into quarters.
  6. 6. Remove the core from the apple quarters.
  7. 7. Cut the cored apple quarters into thin wedges.
  8. 8. Place the apple wedges into a pot.
  9. 9. Add the lemon juice to the apple wedges.
  10. 10. Add 60 grams of sugar to the pot.
  11. 11. Add apple juice to the pot.
  12. 12. Add cinnamon to the pot.
  13. 13. Place the pot over medium heat.
  14. 14. Bring the mixture to a boil.
  15. 15. Cook the apple wedges for about 3 to 5 minutes.
  16. 16. Chop the walnuts coarsely in the meantime.
  17. 17. Place the remaining sugar into a frying pan.
  18. 18. Add 4 tablespoons of water to the sugar in the pan.
  19. 19. Place the frying pan over medium heat.
  20. 20. Caramelize the sugar-water mixture for about 4 minutes until it is light brown.
  21. 21. Do not stir during the caramelization process.
  22. 22. Add the chopped walnuts to the hot pan.
  23. 23. Mix the walnuts thoroughly with the caramel.
  24. 24. Place a piece of baking paper on a work surface.
  25. 25. Place the walnut-caramel mixture onto the baking paper.
  26. 26. Spread the mixture evenly on the paper.
  27. 27. Allow the walnut praline to cool down.
  28. 28. Place the cream into a tall container.
  29. 29. Whip the cream stiffly using a hand mixer with the whisk attachment.
  30. 30. Crumble the cooled walnut praline into small pieces.
  31. 31. Take out some apple wedges from the soup and set them aside.
  32. 32. Puree the rest of the soup finely.
  33. 33. Season the pureed soup to taste.
  34. 34. Add the reserved apple wedges back into the soup.
  35. 35. Fill the apple soup into cups.
  36. 36. Add some cream on top of the soup.
  37. 37. Sprinkle the walnut praline over the soup.
  38. 38. Serve the apple soup.
