🍰 Warm Apple Soup with Crunchy Walnuts

Ingredients
- lemon 1 pc.
- apples, red 750 g
- sugar 110 g
- apple juice 500 ml
- cinnamon pinch
- walnut kernels 20 g
- whipping cream 100 g
Instructions
- 1. Thoroughly wash the lemon under running water.
- 2. Cut the lemon in half and squeeze out the juice.
- 3. Wash the apples thoroughly.
- 4. Peel the apples completely.
- 5. Cut the apples into quarters.
- 6. Remove the core from the apple quarters.
- 7. Cut the cored apple quarters into thin wedges.
- 8. Place the apple wedges into a pot.
- 9. Add the lemon juice to the apple wedges.
- 10. Add 60 grams of sugar to the pot.
- 11. Add apple juice to the pot.
- 12. Add cinnamon to the pot.
- 13. Place the pot over medium heat.
- 14. Bring the mixture to a boil.
- 15. Cook the apple wedges for about 3 to 5 minutes.
- 16. Chop the walnuts coarsely in the meantime.
- 17. Place the remaining sugar into a frying pan.
- 18. Add 4 tablespoons of water to the sugar in the pan.
- 19. Place the frying pan over medium heat.
- 20. Caramelize the sugar-water mixture for about 4 minutes until it is light brown.
- 21. Do not stir during the caramelization process.
- 22. Add the chopped walnuts to the hot pan.
- 23. Mix the walnuts thoroughly with the caramel.
- 24. Place a piece of baking paper on a work surface.
- 25. Place the walnut-caramel mixture onto the baking paper.
- 26. Spread the mixture evenly on the paper.
- 27. Allow the walnut praline to cool down.
- 28. Place the cream into a tall container.
- 29. Whip the cream stiffly using a hand mixer with the whisk attachment.
- 30. Crumble the cooled walnut praline into small pieces.
- 31. Take out some apple wedges from the soup and set them aside.
- 32. Puree the rest of the soup finely.
- 33. Season the pureed soup to taste.
- 34. Add the reserved apple wedges back into the soup.
- 35. Fill the apple soup into cups.
- 36. Add some cream on top of the soup.
- 37. Sprinkle the walnut praline over the soup.
- 38. Serve the apple soup.
