🍰 Fluffy Blueberry Rolls

Ingredients
- milk 250 ml
- yeast, fresh 0.5 pcs
- sugar 60 g
- butter 100 g
- salt pinch
- eggs 2 pcs
- wheat flour, type 405 600 g
- blueberries, fresh 100 g
- blueberry jam 200 g
- crème fraîche 100 g
- powdered sugar 1 tbsp
Instructions
- 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into the lukewarm milk and stir in 1 tablespoon of sugar until the yeast has dissolved.
- 3. Cover the pot and let the yeast milk rest for about 10 minutes.
- 4. Pour the yeast milk into a bowl.
- 5. Add the remaining sugar, butter, salt, 1 egg, and the flour.
- 6. Knead everything into a smooth dough.
- 7. Let the dough rise for 1 hour.
- 8. Thoroughly wash the blueberries.
- 9. Sort the berries and let them drain in a sieve.
- 10. Separate the remaining egg into yolk and white.
- 11. Mix the egg yolk in a bowl with the jam and crème fraîche.
- 12. Knead the dough again briefly.
- 13. Dust a work surface with flour.
- 14. Roll the dough out into a rectangle.
- 15. Spread the jam mixture evenly over the dough.
- 16. Leave a border around the edges of the dough.
- 17. Distribute the blueberries evenly over the cream.
- 18. Roll the dough up from one long side.
- 19. Cut the roll into pieces about 5 cm thick.
- 20. Place the pieces cut side up in a springform lined with baking paper.
- 21. Cover the pan and let the rolls rise for about 25–30 minutes.
- 22. Preheat the oven to 180 °C (fan).
- 23. Bake the rolls for about 35–40 minutes.
- 24. Cover the rolls with aluminum foil during the last 5–10 minutes.
- 25. Allow the baked rolls to cool.
- 26. Dust them with powdered sugar before serving.
