  1. 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Crumble the yeast into the lukewarm milk and stir in 1 tablespoon of sugar until the yeast has dissolved.
  3. 3. Cover the pot and let the yeast milk rest for about 10 minutes.
  4. 4. Pour the yeast milk into a bowl.
  5. 5. Add the remaining sugar, butter, salt, 1 egg, and the flour.
  6. 6. Knead everything into a smooth dough.
  7. 7. Let the dough rise for 1 hour.
  8. 8. Thoroughly wash the blueberries.
  9. 9. Sort the berries and let them drain in a sieve.
  10. 10. Separate the remaining egg into yolk and white.
  11. 11. Mix the egg yolk in a bowl with the jam and crème fraîche.
  12. 12. Knead the dough again briefly.
  13. 13. Dust a work surface with flour.
  14. 14. Roll the dough out into a rectangle.
  15. 15. Spread the jam mixture evenly over the dough.
  16. 16. Leave a border around the edges of the dough.
  17. 17. Distribute the blueberries evenly over the cream.
  18. 18. Roll the dough up from one long side.
  19. 19. Cut the roll into pieces about 5 cm thick.
  20. 20. Place the pieces cut side up in a springform lined with baking paper.
  21. 21. Cover the pan and let the rolls rise for about 25–30 minutes.
  22. 22. Preheat the oven to 180 °C (fan).
  23. 23. Bake the rolls for about 35–40 minutes.
  24. 24. Cover the rolls with aluminum foil during the last 5–10 minutes.
  25. 25. Allow the baked rolls to cool.
  26. 26. Dust them with powdered sugar before serving.
