🍰 Grapefruit Blueberry Cake

Ingredients
- butter 150 g
- sugar 150 g
- salt pinch
- vanilla extract 1 tsp
- eggs 2 pcs
- wheat flour, type 405 90 g
- baking powder 1 tsp
- almonds, ground 100 g
- blueberries, fresh 250 g
- cornstarch 20 g
- grapefruit 0.25 pcs
- powdered sugar 2 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius top/bottom heat.
- 2. Grease a loaf pan with baking spray.
- 3. Beat the soft butter with the sugar, a pinch of salt, and the vanilla extract until creamy and light, about 4 to 5 minutes.
- 4. Add the eggs and mix them in for about one minute.
- 5. Add the flour, baking powder, and ground almonds, and mix everything briefly.
- 6. Place 200 grams of blueberries and the starch in a separate bowl.
- 7. Toss the berries in the bowl until they are completely coated with the starch.
- 8. Gently fold the dusted blueberries into the batter.
- 9. Pour the batter into the prepared pan and smooth the surface.
- 10. Bake the cake in the preheated oven at 180 degrees for about 50 minutes.
- 11. Slice the grapefruit thinly and quarter the slices.
- 12. Dust the finished cake with powdered sugar.
- 13. Decorate the cake for serving with the remaining 50 grams of blueberries and the grapefruit slices.
