🍰 Light Blueberry Skyramisu

Ingredients
- Brown sugar 100 g
- Water 100 ml
- Blueberries, fresh 400 g
- Whipping cream 200 g
- Skyr, plain 400 g
- Vanilla sugar 20 g
- Ladyfingers 100 g
Instructions
- 1. Put sugar and water into a pot.
- 2. Heat the mixture until the sugar is completely dissolved.
- 3. Let the syrup cool down.
- 4. Wash the blueberries thoroughly.
- 5. Drain the berries.
- 6. Put the whipping cream into a mixing bowl.
- 7. Whip the cream firmly with a hand mixer.
- 8. Put the skyr into a separate bowl.
- 9. Mix the skyr well with the vanilla sugar.
- 10. Gently fold the whipped cream into the skyr mixture.
- 11. Take 50 grams of the blueberries.
- 12. Puree these berries with half of the cooled sugar syrup.
- 13. Place the ladyfinger biscuits side by side in a rectangular dish.
- 14. Drizzle the remaining syrup over the biscuits.
- 15. Distribute 300 grams of the blueberries evenly over the biscuits.
- 16. Spread the skyr cream evenly over the berries.
- 17. Put the blueberry sauce on top of the skyr layer.
- 18. Gently fold the sauce in until it is distributed.
- 19. Place the dish in the refrigerator to chill.
- 20. Garnish the finished dessert with the remaining fresh blueberries.
- 21. Serve the blueberry skyramisu.
