🍰 Fruity Blueberry Mousse

Ingredients
- blueberries, frozen 250 g
- leaf gelatin 5 pcs.
- elderflower syrup 1 tbsp
- crème fraîche 100 g
- sugar 75 g
- whipping cream 250 ml
Instructions
- 1. Let the blueberries thaw overnight in the refrigerator.
- 2. Soak the gelatin leaves in a bowl of cold water.
- 3. Place the thawed blueberries, elderflower syrup, crème fraîche, and sugar into a tall beaker.
- 4. Blend the mixture with an immersion blender until smooth.
- 5. Squeeze the soaked gelatin leaves thoroughly.
- 6. Dissolve the gelatin in a saucepan over low heat using two tablespoons of the blueberry cream.
- 7. Stir the gelatin mixture into the remaining blueberry cream.
- 8. Whip the cream stiffly using a hand mixer and whisk.
- 9. Gently fold the whipped cream into the blueberry cream.
- 10. Place the mousse in the refrigerator for at least two hours to set.
- 11. Scoop out small portions of the mousse and serve.
