  1. 1. Let the blueberries thaw overnight in the refrigerator.
  2. 2. Soak the gelatin leaves in a bowl of cold water.
  3. 3. Place the thawed blueberries, elderflower syrup, crème fraîche, and sugar into a tall beaker.
  4. 4. Blend the mixture with an immersion blender until smooth.
  5. 5. Squeeze the soaked gelatin leaves thoroughly.
  6. 6. Dissolve the gelatin in a saucepan over low heat using two tablespoons of the blueberry cream.
  7. 7. Stir the gelatin mixture into the remaining blueberry cream.
  8. 8. Whip the cream stiffly using a hand mixer and whisk.
  9. 9. Gently fold the whipped cream into the blueberry cream.
  10. 10. Place the mousse in the refrigerator for at least two hours to set.
  11. 11. Scoop out small portions of the mousse and serve.
