  1. 1. Preheat the oven to 200 degrees Celsius convection.
  2. 2. Separate one egg and set aside the egg white for another use.
  3. 3. Mix the egg yolk in a bowl with butter, 30 grams of sugar, a pinch of salt, and flour to form a shortcrust pastry.
  4. 4. Roll out the dough on a floured surface to about 3 millimeters thick.
  5. 5. Cut out round pieces of dough and line four greased tartlet pans (each 10 centimeters in diameter) with them.
  6. 6. Press a rim about 2 centimeters high at the edges of the pans.
  7. 7. Cover the tart bases with baking paper and fill them with baking beans as weights.
  8. 8. Pre-bake the tarts in the oven for about 10 minutes.
  9. 9. Crumble the marzipan finely in a bowl.
  10. 10. Mix the crumbled marzipan with the remaining egg, crème fraîche, and the remaining sugar.
  11. 11. Rinse the blueberries thoroughly.
  12. 12. Distribute the blueberries evenly over the pre-baked tart bases.
  13. 13. Pour the marzipan mixture over the blueberries.
  14. 14. Bake the tarts for approx. 20 minutes in the oven until golden brown.
