🍰 Blueberry Marzipan Tarts

Ingredients
- eggs 2 pcs
- butter 50 g
- brown sugar 40 g
- salt pinch
- wheat flour, type 405 110 g
- marzipan raw mass 50 g
- crème fraîche 100 g
- blueberries, fresh 150 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius convection.
- 2. Separate one egg and set aside the egg white for another use.
- 3. Mix the egg yolk in a bowl with butter, 30 grams of sugar, a pinch of salt, and flour to form a shortcrust pastry.
- 4. Roll out the dough on a floured surface to about 3 millimeters thick.
- 5. Cut out round pieces of dough and line four greased tartlet pans (each 10 centimeters in diameter) with them.
- 6. Press a rim about 2 centimeters high at the edges of the pans.
- 7. Cover the tart bases with baking paper and fill them with baking beans as weights.
- 8. Pre-bake the tarts in the oven for about 10 minutes.
- 9. Crumble the marzipan finely in a bowl.
- 10. Mix the crumbled marzipan with the remaining egg, crème fraîche, and the remaining sugar.
- 11. Rinse the blueberries thoroughly.
- 12. Distribute the blueberries evenly over the pre-baked tart bases.
- 13. Pour the marzipan mixture over the blueberries.
- 14. Bake the tarts for approx. 20 minutes in the oven until golden brown.
