🍰 Oven Blueberry Pear Pancakes

Ingredients
- Brown sugar 40 g
- Salt pinch
- Wheat flour, Type 405 150 g
- Eggs 2 pcs.
- Milk 200 ml
- Pears 500 g
- Butter 2 tbsp
- Blueberries, fresh 200 g
- Pecan nuts 50 g
- Icing sugar 1 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Add sugar, salt, and flour to a large bowl.
- 3. Whisk the eggs and milk together in a separate container.
- 4. Pour half of the egg-milk mixture into the flour bowl.
- 5. Stir the batter until smooth with no lumps.
- 6. Slowly pour in the remaining egg-milk mixture while stirring constantly.
- 7. Let the finished batter rest for about 15 minutes.
- 8. Thoroughly wash the pears.
- 9. Peel the pears and cut them into quarters.
- 10. Remove the cores from the pear quarters.
- 11. Cut the pears into thin wedges.
- 12. Grease a baking dish with a diameter of 26 to 28 centimeters.
- 13. Place the pear wedges evenly into the dish.
- 14. Distribute the remaining butter in small pieces over the pears.
- 15. Place the dish in the preheated oven for 5 to 8 minutes.
- 16. Rinse the blueberries under running water.
- 17. Drain the blueberries well.
- 18. Chop the pecans coarsely.
- 19. Remove the dish from the oven and stir the batter again.
- 20. Gently fold in the blueberries and pecans into the batter.
- 21. Pour the batter evenly over the pears in the dish.
- 22. Bake the dish at 180 degrees Celsius with fan for about 20 minutes.
- 23. Take the pancakes out of the oven when the edges are golden brown.
- 24. Let the pancakes cool slightly or serve them completely cold.
- 25. Dust the pancakes with powdered sugar before serving.
