🍰 Blueberry Banana Cake

Ingredients
- blueberries, frozen 200 g
- walnut kernels 50 g
- bananas 4 pcs.
- oil 80 ml
- brown sugar 80 g
- cinnamon 0.25 tsp
- wheat flour, Type 405 250 g
- baking powder 2 tsp
Instructions
- 1. Let the blueberries thaw overnight in the fridge. Preheat the oven to 180 °C (convection). Chop the walnuts into small pieces. Peel the bananas and halve one of them; set half aside for decoration. Mash the remaining bananas with a fork in a bowl.
- 2. Add oil, cane sugar, and cinnamon to the bowl and mix everything with a hand mixer using a whisk attachment. Add the flour and baking powder and stir until you have a smooth batter. Gently fold in the walnuts and blueberries.
- 3. Grease a loaf pan with oil and dust it with breadcrumbs. Pour the batter evenly into the pan. Place the halved banana on top of the batter, press it in slightly, and bake the cake for about 50 minutes in the oven.
- 4. Take the banana bread out of the oven, let it cool slightly, and turn it out of the pan. Enjoy your meal!
