🍰 Yeast Flower with Chocolate-Pistachio Filling

Ingredients
- milk 150 ml
- yeast, fresh 42 g
- sugar 6 tbsp
- wheat flour, Type 405 500 g
- salt pinch
- butter 100 g
- eggs 2 pcs.
- pistachios 100 g
- cranberries, dried 80 g
- nut nougat cream 100 g
- whipping cream 1 tbsp
Instructions
- 1. Slightly warm the milk in a pot.
- 2. Crumble the yeast and dissolve it together with one tablespoon of sugar in the milk.
- 3. Cover the milk and let it rest for about ten minutes.
- 4. Mix the remaining sugar, flour, salt, and diced butter in a bowl.
- 5. Pour in the yeast milk and the eggs.
- 6. Knead everything into a smooth dough.
- 7. Cover the bowl with a clean kitchen towel.
- 8. Let the dough rise in a warm place for about one hour until it has significantly increased in size.
- 9. Remove the pistachios from their shells.
- 10. Chop the pistachios coarsely.
- 11. Chop the cranberries finely.
- 12. Sprinkle some flour on the work surface.
- 13. Knead the dough through again on it.
- 14. Divide the dough into four equal parts.
- 15. Take one quarter of the dough.
- 16. Roll this piece out thinly.
- 17. Cut out a circle with a diameter of 30 centimeters.
- 18. Place the dough circle on a baking sheet lined with parchment paper.
- 19. Spread one third of the nut nougat cream evenly over the dough.
- 20. Sprinkle one third of the pistachios over it.
- 21. Sprinkle one third of the cranberries over it.
- 22. Repeat steps 15 to 21 twice with the next dough quarters.
- 23. Roll out the last dough quarter as well.
- 24. Place it on top of the layer.
- 25. Preheat the oven to 175 degrees top and bottom heat.
- 26. Mark a circle in the center of the dough with a small cup.
- 27. Cut the dough around the marking into 16 pieces.
- 28. Take two adjacent dough strips each time.
- 29. Carefully twist them together three times.
- 30. Press the bottom ends together.
- 31. Form a flower this way.
- 32. Cover the flower.
- 33. Let it rise for another ten minutes.
- 34. Brush the dough with cream.
- 35. Bake the yeast flower in the oven for about 25 minutes.
- 36. Remove it when it is golden brown.
- 37. Let it cool.
