  1. 1. Slightly warm the milk in a pot.
  2. 2. Crumble the yeast and dissolve it together with one tablespoon of sugar in the milk.
  3. 3. Cover the milk and let it rest for about ten minutes.
  4. 4. Mix the remaining sugar, flour, salt, and diced butter in a bowl.
  5. 5. Pour in the yeast milk and the eggs.
  6. 6. Knead everything into a smooth dough.
  7. 7. Cover the bowl with a clean kitchen towel.
  8. 8. Let the dough rise in a warm place for about one hour until it has significantly increased in size.
  9. 9. Remove the pistachios from their shells.
  10. 10. Chop the pistachios coarsely.
  11. 11. Chop the cranberries finely.
  12. 12. Sprinkle some flour on the work surface.
  13. 13. Knead the dough through again on it.
  14. 14. Divide the dough into four equal parts.
  15. 15. Take one quarter of the dough.
  16. 16. Roll this piece out thinly.
  17. 17. Cut out a circle with a diameter of 30 centimeters.
  18. 18. Place the dough circle on a baking sheet lined with parchment paper.
  19. 19. Spread one third of the nut nougat cream evenly over the dough.
  20. 20. Sprinkle one third of the pistachios over it.
  21. 21. Sprinkle one third of the cranberries over it.
  22. 22. Repeat steps 15 to 21 twice with the next dough quarters.
  23. 23. Roll out the last dough quarter as well.
  24. 24. Place it on top of the layer.
  25. 25. Preheat the oven to 175 degrees top and bottom heat.
  26. 26. Mark a circle in the center of the dough with a small cup.
  27. 27. Cut the dough around the marking into 16 pieces.
  28. 28. Take two adjacent dough strips each time.
  29. 29. Carefully twist them together three times.
  30. 30. Press the bottom ends together.
  31. 31. Form a flower this way.
  32. 32. Cover the flower.
  33. 33. Let it rise for another ten minutes.
  34. 34. Brush the dough with cream.
  35. 35. Bake the yeast flower in the oven for about 25 minutes.
  36. 36. Remove it when it is golden brown.
  37. 37. Let it cool.
