Ingredients
- Raisins 50 g
- Sugar 1 tbsp
- Water 500 ml
Instructions
- 1. Choose a clean jar for fermentation. A tall mason jar with a lid or an old milk bottle works well.
- 2. Add raisins, sugar, and lukewarm water to the bottle.
- 3. Shake the bottle vigorously until the sugar has completely dissolved.
- 4. Place the bottle in a warm spot with a temperature between 25 and 35 degrees Celsius.
- 5. Place the lid loosely on the bottle.
- 6. Let the mixture ferment for 3 to 8 days.
- 7. Swirl the bottle at least twice a day.
- 8. Open the lid fully for a moment to let the built-up gas escape.
- 9. Check after 3 to 8 days if the yeast is ready.
- 10. The yeast water is ready when it smells like yeast, bubbling has slowed down, and the raisins have floated to the top.
- 11. Pour the yeast water through a sieve to remove the raisins.
- 12. Use the yeast water like fresh yeast in your recipe.
- 13. Replace the liquid specified in the recipe with the yeast water.
- 14. Keep the conversion in mind: 150 milliliters of yeast water equals about 12 grams of fresh yeast or 4 grams of dry yeast for 500 grams of flour.
