  1. 1. Separate the eggs. Set the egg yolks aside.
  2. 2. In a bowl, mix the egg yolks with flour, salt, butter, sour cream, and one tablespoon of sugar.
  3. 3. Knead the ingredients into a smooth dough.
  4. 4. Let the dough rest in the refrigerator for about 30 minutes.
  5. 5. In a clean bowl, beat the egg whites with a hand mixer and whisk until almost stiff.
  6. 6. Gradually sprinkle in the remaining sugar.
  7. 7. Continue beating until a glossy, thick mass forms.
  8. 8. Gently fold the nuts into the egg mixture.
  9. 9. Preheat the oven to 175 degrees Celsius with top and bottom heat.
  10. 10. Divide the dough into four equal parts.
  11. 11. Dust a work surface with flour.
  12. 12. Roll each piece of dough thinly into a circle about 28 centimeters in diameter.
  13. 13. Cut each circle into six triangles.
  14. 14. Brush the edges of the triangles thinly with cream.
  15. 15. Place one spoonful of the nut mixture at the bottom edge of each triangle.
  16. 16. Fold the dough from the bottom over the filling.

  20. 20. Place the croissants on baking sheets lined with baking paper.
