🍰 Moist Hazelnut Pear Cake with Chocolate Glaze

Ingredients
- Pears 4 pcs.
- Eggs 3 pcs.
- Brown sugar 175 g
- Vanilla sugar 2 tsp
- Salt pinch
- Sunflower oil 200 ml
- Hazelnut kernels, ground 150 g
- Wheat flour, Type 405 250 g
- Baking powder 2 tsp
- Buttermilk 75 ml
- Chocolate coating, dark 100 g
- Whipping cream 200 g
- Butter 1 tbsp
Instructions
- 1. Turn on the oven to 180 degrees Celsius fan mode.
- 2. Peel the pears.
- 3. Cut the pears in half.
- 4. Remove the seeds from the pear halves.
- 5. Dice the pear flesh into small cubes.
- 6. Add eggs, sugar, vanilla sugar, and salt to a large bowl.
- 7. Beat the ingredients with a hand mixer using the whisk attachment until the mixture is frothy.
- 8. Stir the oil into the egg mixture.
- 9. Add the nuts, flour, baking powder, and buttermilk.
- 10. Mix everything well until a uniform batter forms.
- 11. Gently fold the pear cubes into the batter.
- 12. Grease a loaf pan.
- 13. Pour the batter into the prepared pan.
- 14. Smooth the surface of the batter.
- 15. Bake the cake in the preheated oven for about 60 minutes.
- 16. Loosely cover the top of the cake with aluminum foil towards the end of the baking time if it gets too dark.
- 17. Let the cake cool on a wire rack.
- 18. Turn the cake out of the pan.
- 19. Chop the couverture chocolate into small pieces.
- 20. Heat cream and butter in a saucepan.
- 21. Let the couverture melt in the warm cream mixture.
- 22. Let the chocolate mixture cool down slightly.
- 23. Pour the chocolate mixture over the cooled cake.
- 24. Let the glaze set.
