🍽️ Hamburger Pannfisch: Cod with Fried Potatoes and Mustard Sauce

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- lemons 1 pc.
- onions, yellow 1 pc.
- pickles 4 pc.
- cod, frozen 600 g
- pepper, black ground pinch
- butter 4 tbsp
- oil 3 tbsp
- wheat flour, Type 405 2 tbsp
- white wine, dry 100 ml
- vegetable broth 100 ml
- whipping cream 100 ml
- mustard 2 tbsp
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Bring the water to a boil.
- 4. Cook the potatoes for approx. 20 minutes with the lid closed.
- 5. Wash the lemon.
- 6. Cut the lemon in half.
- 7. Squeeze the juice from the lemon.
- 8. Cut the onion in half.
- 9. Peel the onion halves.
- 10. Dice the onion finely.
- 11. Slice the gherkins into thin slices.
- 12. Rinse the thawed cod.
- 13. Pat the cod dry with a kitchen towel.
- 14. Cut the cod into pieces of 2–3 cm.
- 15. Season the cod with salt, pepper, and lemon juice.
- 16. Drain the cooked potatoes.
- 17. Peel the potatoes.
- 18. Slice the potatoes.
- 19. Heat 2 tablespoons of butter and oil in a pan over high heat.
- 20. Fry the potato slices in it for approx. 7 minutes until golden brown.
- 21. Heat 2 tablespoons of butter in another pan.
- 22. Fry the fish for approx. 3 minutes on each side.
- 23. Wrap the finished cod in aluminum foil.
- 24. Set the fish aside.
- 25. Do not clean the pan.
- 26. Sauté the onion in the remaining frying fat until translucent.
- 27. Dust the onions with flour.
- 28. Sauté the flour briefly.
- 29. Deglaze the pan with wine.
- 30. Deglaze the pan with broth.
- 31. Bring the sauce to a boil.
- 32. Simmer the sauce for approx. 6 minutes.
- 33. Stir the cream into the sauce.
- 34. Stir the mustard into the sauce.
- 35. Season the mustard sauce with salt and pepper.
- 36. Place the fried potatoes on the plates.
- 37. Place the Hamburger Pannfisch on the potatoes.
- 38. Pour the mustard sauce over the fish.
- 39. Garnish the dish with the gherkins.
