Ingredients
- Halloumi with Basil 8 pcs
- Pistachios 6 tbsp
- Organic Limes 1 pc
- Basil, fresh 10 g
- Oil 2 tbsp
- Cretian Mixed Flower Honey 3 tbsp
- Olive Oil 3 tbsp
- Salt 1 tbsp
- Pepper, black ground pinch
Instructions
- 1. Cut the Halloumi cheese in half lengthwise to create flat pieces. Slice each piece into strips about 1 centimeter thick. Set the cheese aside to let it reach room temperature.
- 2. Remove the shells from the pistachios. Then chop the nuts roughly into small pieces.
- 3. Wash the lime thoroughly. Finely grate about half a teaspoon of the green zest. Cut the lime in half and squeeze out the juice.
- 4. Wash the basil leaves. Shake them dry to remove excess water. Pluck the leaves and chop them finely, removing the stems.
- 5. Heat a pan over medium heat. Add one tablespoon of oil to the pan. Roast the pistachios in the oil for about 2 to 3 minutes. Shake the pan occasionally until the nuts are golden brown.
- 6. Place the hot pistachios into a bowl. Add one tablespoon of honey, the lime zest, and one tablespoon of olive oil. Mix everything well.
- 7. Season the pistachio mixture with salt and pepper to taste.
- 8. Heat a pan or a grill pan over medium to high heat. Rub the Halloumi slices with oil on both sides.
- 9. Fry the cheese all around for about 3 to 4 minutes. Turn it until it is golden brown and crispy on both sides.
- 10. Arrange the cheese slices slightly overlapping on a serving plate.
- 11. Distribute the honey-pistachios and fresh basil over the cheese.
- 12. Drizzle some lime juice and olive oil over the dish. Serve immediately.
