  1. 1. Preheat the oven to 200 degrees Celsius with fan.
  2. 2. Pour the buttermilk over the oat flakes in a bowl.
  3. 3. Let the oat flakes soak in the buttermilk for 10 minutes.
  4. 4. Take a second bowl and add flour, baking powder, salt, sugar, cinnamon, and raisins.
  5. 5. Add the egg and the oil to the dry mixture.
  6. 6. Add the soaked oat flakes along with the buttermilk.
  7. 7. Stir everything together with a spoon or whisk until you have a smooth batter.
  8. 8. Grease the molds of a muffin tin.
  9. 9. Distribute the batter evenly among the molds.
  10. 10. Bake the muffins for about 35 minutes in the preheated oven.
  11. 11. Rinse the apricots under running water.
  12. 12. Halve the apricots and remove the pits.
  13. 13. Cut the fruit flesh into small cubes.
  14. 14. Place the apricot cubes in a bowl.
  15. 15. Pour the apple juice over the cubes.
  16. 16. Let the apricots soak in the juice for 20 minutes.
  17. 17. Heat a frying pan over medium heat.
  18. 18. Toast the hazelnuts in the pan without adding extra fat.
  19. 19. Cook the nuts for about 2 minutes until they are golden brown.
  20. 20. Remove the nuts from the pan and let them cool down completely.
  21. 21. Finely chop the cooled hazelnuts.
  22. 22. Take the soaked apricots out of the juice.
  23. 23. Puree the apricots together with the juice in the bowl until smooth.
  24. 24. Mix the apricot puree with the quark.
  25. 25. Fold in the chopped hazelnuts into the quark mixture.
  26. 26. Season the cream to taste with honey.
  27. 27. Take the baked muffins out of the oven.
  28. 28. Let the muffins cool down completely.
  29. 29. Spread the apricot quark cream onto the cooled muffins.
  30. 30. Serve the muffins and enjoy them.
