🍰 Oat Muffins with Apricot Quark Cream

Ingredients
- oats, coarse 60 g
- buttermilk 350 ml
- wheat flour, Type 405 175 g
- baking powder 1 tsp
- salt pinch
- brown sugar 150 g
- cinnamon pinch
- raisins 50 g
- eggs 1 pcs
- sunflower oil 5 tbsp
- apricots, fresh 150 g
- apple juice 100 ml
- hazelnut kernels, whole 3 tbsp
- quark 40 % Fett i.Tr. 250 g
- honey 1 tsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Pour the buttermilk over the oat flakes in a bowl.
- 3. Let the oat flakes soak in the buttermilk for 10 minutes.
- 4. Take a second bowl and add flour, baking powder, salt, sugar, cinnamon, and raisins.
- 5. Add the egg and the oil to the dry mixture.
- 6. Add the soaked oat flakes along with the buttermilk.
- 7. Stir everything together with a spoon or whisk until you have a smooth batter.
- 8. Grease the molds of a muffin tin.
- 9. Distribute the batter evenly among the molds.
- 10. Bake the muffins for about 35 minutes in the preheated oven.
- 11. Rinse the apricots under running water.
- 12. Halve the apricots and remove the pits.
- 13. Cut the fruit flesh into small cubes.
- 14. Place the apricot cubes in a bowl.
- 15. Pour the apple juice over the cubes.
- 16. Let the apricots soak in the juice for 20 minutes.
- 17. Heat a frying pan over medium heat.
- 18. Toast the hazelnuts in the pan without adding extra fat.
- 19. Cook the nuts for about 2 minutes until they are golden brown.
- 20. Remove the nuts from the pan and let them cool down completely.
- 21. Finely chop the cooled hazelnuts.
- 22. Take the soaked apricots out of the juice.
- 23. Puree the apricots together with the juice in the bowl until smooth.
- 24. Mix the apricot puree with the quark.
- 25. Fold in the chopped hazelnuts into the quark mixture.
- 26. Season the cream to taste with honey.
- 27. Take the baked muffins out of the oven.
- 28. Let the muffins cool down completely.
- 29. Spread the apricot quark cream onto the cooled muffins.
- 30. Serve the muffins and enjoy them.
