🍽️ Oatmeal Schnitzels with Creamy Peas and Carrots and Rösti

Ingredients
- Rösti Squares 11 pcs.
- Oats, fine 150 g
- Mustard 2 tsp
- Sweet Paprika 1 tsp
- Garlic, granulated 1 tsp
- Salt pinch
- Pepper, black ground pinch
- Vegetable Broth 200 ml
- Carrots 3 pcs.
- Oil 5 tbsp
- Peas, frozen 100 g
- Margarine, vegan 1 tbsp
- Wheat Flour, Type 405 4 tbsp
- Soy Drink 240 ml
- Breadcrumbs 4 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Place the rösti on a baking sheet lined with baking paper.
- 3. Bake the rösti in the oven for about 20 minutes until golden brown.
- 4. Mix oatmeal with mustard, paprika powder, garlic powder, salt, and pepper in a bowl.
- 5. Pour 200 milliliters of hot vegetable broth over the oatmeal mixture.
- 6. Let the oatmeal mixture soak covered for about 10 minutes.
- 7. Peel the carrots and halve them lengthwise.
- 8. Cut the carrot halves into half-moons.
- 9. Heat 1 tablespoon of oil in a small pot.
- 10. Sauté the carrot rings in the hot oil for about 5 minutes.
- 11. Add the peas to the carrots.
- 12. Fill the pot with 250 milliliters of water.
- 13. Simmer the vegetables for about 10 minutes.
- 14. Drain the vegetables in a sieve.
- 15. Melt margarine in a pot.
- 16. Add 1 tablespoon of flour to the melted margarine.
- 17. Sauté the flour for about 1 minute.
- 18. Deglaze the sauce with 200 milliliters of soy drink.
- 19. Add the drained vegetables to the sauce.
- 20. Knead the oatmeal mixture with moistened hands.
- 21. Form 4 even schnitzels from the mixture.
- 22. Roll the schnitzels first in the flour.
- 23. Then dip the schnitzels in the soy drink.
- 24. Finally roll the schnitzels in the breadcrumbs.
- 25. Heat 4 tablespoons of oil in a pan over medium heat.
- 26. Fry the oatmeal schnitzels on each side for about 2 to 3 minutes until golden brown.
- 27. Let the finished schnitzels drain on kitchen paper.
- 28. Serve the vegan oatmeal schnitzels with the peas and carrots on plates.
- 29. Serve the schnitzels with the rösti.
