🍽️ Chicken Strips in Peanut Sauce with Colorful Vegetable Rice

Ingredients
- Long-grain rice 300 g
- Salt pinch
- Pepper, red 1 pc
- Corn from the can 250 g
- Cilantro, fresh 20 g
- Peanuts 4 tbsp
- Chicken breast fillets 600 g
- Oil 4 tbsp
- Peanut butter 4 tbsp
- Whipping cream 200 g
- Curry powder pinch
Instructions
- 1. Put the rice and about 700 milliliters of salted water into a pot.
- 2. Bring the mixture to a boil.
- 3. Reduce the heat to low.
- 4. Cover the pot.
- 5. Let the rice cook for about 15 minutes.
- 6. Stir the rice occasionally.
- 7. Wash the bell peppers thoroughly.
- 8. Halve the bell peppers and remove the seeds.
- 9. Cut the bell peppers into small cubes.
- 10. Drain the corn in a sieve.
- 11. Wash the coriander leaves.
- 12. Shake the coriander dry.
- 13. Pluck the leaves from the stems.
- 14. Finely chop the coriander leaves.
- 15. Coarsely crush the peanuts.
- 16. Rinse the chicken strips.
- 17. Pat the meat dry.
- 18. Cut the chicken meat lengthwise into thin strips.
- 19. Heat 2 tablespoons of oil in a frying pan over high heat.
- 20. Sear the chicken strips on all sides.
- 21. Cook the chicken strips for about 2 minutes.
- 22. Remove the chicken strips from the pan.
- 23. Place the chicken strips on a plate.
- 24. Add the peanut butter to the pan.
- 25. Add the whipping cream to the pan.
- 26. Mix the peanut butter and cream well with the pan juices.
- 27. Season the sauce with curry.
- 28. Season the sauce with salt.
- 29. Simmer the sauce over low heat for about 5 minutes.
- 30. Add the chicken strips back into the pan.
- 31. Remove the pan from the heat.
- 32. Cover the pan.
- 33. Keep the chicken strips warm until serving.
- 34. Heat 2 tablespoons of oil in another frying pan over medium heat.
- 35. Fry the bell peppers and corn for about 3 minutes.
- 36. Mix the vegetables into the cooked rice.
- 37. Add the coriander to the rice.
- 38. Season the rice with salt.
- 39. Season the rice with pepper.
- 40. Serve the vegetable rice on plates.
- 41. Place the chicken strips with peanut sauce next to the rice.
- 42. Sprinkle the dish with peanuts.
