  2. 2. Rinse the chicken schnitzels under running water.
  3. 3. Pat the meat completely dry with a kitchen towel.
  4. 4. Place the schnitzels between two layers of cling film.
  5. 5. Gently flatten the meat with a flat object until it is evenly thin.
  6. 6. Season the chicken schnitzels on both sides with salt, pepper, and oregano.
  7. 7. Wash the eggplant thoroughly under running water.
  8. 8. Slice the eggplant into round slices.
  9. 9. Halve the cheese slices.
  10. 10. Distribute the cheese pieces evenly over the seasoned chicken schnitzels.
  11. 11. Place 2 to 3 slices of eggplant on top of the cheese.
  12. 12. Thread the topped schnitzels firmly onto the soaked wooden skewers.
  13. 13. Place the skewers on the hot grill with the topped side facing down.
  14. 14. Grill the schnitzels for about 5 to 7 minutes.
  15. 15. Turn the skewers over.
  16. 16. Grill the other side for another 7 to 10 minutes until the meat is fully cooked.
  17. 17. Carefully remove the skewers from the grill.
  18. 18. Plate the schnitzels and serve them.
