🍽️ Crispy Chicken Nuggets with Coleslaw and Apple Quark Dip

Ingredients
- Cabbage 400 g
- Salt Pinch
- Chicken breast fillets 600 g
- Organic limes 1 pc.
- Chives, fresh 10 g
- Apples, red 2 pc.
- Carrots 2 pc.
- Cornflakes 50 g
- Yogurt, plain 150 g
- Pepper, black ground Pinch
- Oil 1 tbsp
- Sugar Pinch
- Quark 40% fat in total 250 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius (convection mode).
- 2. Remove the hard core from the white cabbage and cut the vegetable into thin strips.
- 3. Wash the cabbage strips, spin them dry, and salt them generously.
- 4. Set the prepared cabbage aside.
- 5. Rinse the chicken breast and pat it completely dry with kitchen paper.
- 6. Cut the chicken breast crosswise into five equal pieces.
- 7. Rinse the lime, halve it, and squeeze out the juice.
- 8. Rinse the chives, shake them dry, and cut them into fine rings.
- 9. Rinse the apples, halve them, remove the core, and grate the flesh into a bowl.
- 10. Peel the carrots, remove the ends, and also grate them coarsely into the bowl.
- 11. Fill the cornflakes into a freezer bag.
- 12. Crush the cornflakes into fine crumbs using your hands or a rolling pin.
- 13. Place the cornflake crumbs into a deep plate.
- 14. Mix half of the yogurt with salt and pepper in a second deep plate.
- 15. Coat the chicken pieces first in the yogurt mixture.
- 16. Then roll the chicken pieces in the cornflake crumbs.
- 17. Place the breaded chicken pieces on a baking sheet.
- 18. Bake the nuggets in the oven for about 13 to 15 minutes.
- 19. Mix 1 tablespoon of oil with 3 teaspoons of lime juice and the remaining yogurt in a bowl.
- 20. Rinse the prepared white cabbage again.
- 21. Squeeze the cabbage slightly with your hand to remove excess moisture.
- 22. Add the white cabbage and grated carrots to the dressing.
- 23. Mix everything well together.
- 24. Season the coleslaw with pepper and a pinch of sugar.
- 25. Mix the grated apples with the chives and quark in a bowl.
- 26. Season the apple quark with 2 teaspoons of lime juice, salt, and pepper.
- 27. Take the chicken nuggets out of the oven.
- 28. Plate the nuggets together with the coleslaw and apple quark.
- 29. Serve the dish and enjoy your meal!
