  3. 3. Remove the thick stems from the arugula.
  4. 4. Chop the arugula into small pieces.
  5. 5. Rinse the lemon under hot water.
  6. 6. Finely grate about one teaspoon of the lemon zest.
  7. 7. Peel the garlic.
  8. 8. Chop the garlic finely as well.
  9. 9. Take some soft butter and place it in a bowl.
  10. 10. Mix the butter with the chopped arugula.
  11. 11. Add the lemon zest to the butter mixture.
  12. 12. Add the chopped garlic.
  13. 13. Season the butter with salt and pepper to taste.
  14. 14. Rinse the chicken drumsticks.
  15. 15. Pat the chicken pieces dry with kitchen paper.
  16. 16. Carefully lift the skin of the chicken drumsticks.
  17. 17. Spread some arugula butter under the lifted skin.
  18. 18. Season the chicken drumsticks on the outside with salt and pepper.
  19. 19. Place the chicken drumsticks on a hot grill with the arugula butter side up.
  20. 20. Grill the chicken drumsticks for about 20 minutes.
  21. 21. Turn the chicken pieces several times during grilling.
