🍽️ Crispy Chicken Drumsticks with Fresh Arugula Butter

Ingredients
- Arugula 50 g
- Lemons 1 pc.
- Garlic cloves 1 pc.
- Butter 100 g
- Salt pinch
- Pepper, black ground pinch
- Chicken drumsticks 600 g
Instructions
- 1. Thoroughly wash the arugula under running water.
- 2. Let the greens drain well.
- 3. Remove the thick stems from the arugula.
- 4. Chop the arugula into small pieces.
- 5. Rinse the lemon under hot water.
- 6. Finely grate about one teaspoon of the lemon zest.
- 7. Peel the garlic.
- 8. Chop the garlic finely as well.
- 9. Take some soft butter and place it in a bowl.
- 10. Mix the butter with the chopped arugula.
- 11. Add the lemon zest to the butter mixture.
- 12. Add the chopped garlic.
- 13. Season the butter with salt and pepper to taste.
- 14. Rinse the chicken drumsticks.
- 15. Pat the chicken pieces dry with kitchen paper.
- 16. Carefully lift the skin of the chicken drumsticks.
- 17. Spread some arugula butter under the lifted skin.
- 18. Season the chicken drumsticks on the outside with salt and pepper.
- 19. Place the chicken drumsticks on a hot grill with the arugula butter side up.
- 20. Grill the chicken drumsticks for about 20 minutes.
- 21. Turn the chicken pieces several times during grilling.
- 22. Brush the chicken drumsticks regularly with the remaining butter from the bowl.
- 23. Check if the meat is cooked through and the skin is crispy.
- 24. Serve the chicken drumsticks hot.
