🍽️ Chicken Parmigiana with Spicy Tomato Sauce and Gnocchi

Ingredients
- Garlic cloves 1 pc.
- Olive oil 6 tbsp.
- Tomato paste 3 g
- Tomatoes, chopped 600 g
- Sugar 1 tbsp.
- Salt pinch
- Pepper, black ground pinch
- Chicken breast fillets 600 g
- Mozzarella 2 pcs.
- Thyme, fresh 5 g
- Gnocchi, fresh 800 g
- Butter 2 tbsp.
Instructions
- 1. Peel the garlic clove and chop it very finely.
- 2. Heat two tablespoons of olive oil in a pot over medium heat.
- 3. Add the chopped garlic to the hot oil and roast it for about two minutes.
- 4. Stir in the tomato paste and fry it for one minute.
- 5. Add the chopped tomatoes, sugar, salt, and pepper to the pot.
- 6. Let the sauce simmer for about ten minutes, stirring occasionally.
- 7. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 8. Rinse the chicken breast fillets and pat them dry with kitchen paper.
- 9. Lightly salt the fillets.
- 10. Heat oil in a large pan over high heat.
- 11. Sear the chicken fillets for about two minutes on all sides.
- 12. Place the seared fillets in a baking dish.
- 13. Leave the pan with the cooking residues uncleaned.
- 14. Dry the mozzarella with a cloth.
- 15. Cut the mozzarella into thin slices.
- 16. Wash the thyme sprigs and shake them dry.
- 17. Pluck the thyme leaves from the stems.
- 18. Chop the thyme leaves finely.
- 19. Stir half of the chopped thyme leaves into the tomato sauce.
- 20. Season the sauce with salt, pepper, and sugar.
- 21. Pour the sauce evenly over the fillets in the baking dish.
- 22. Place the mozzarella slices on top of the fillets.
- 23. Place the baking dish in the oven and bake the fillets for about ten to fifteen minutes.
- 24. Heat two tablespoons of olive oil in the pan with the cooking residues over high heat.
- 25. Add the gnocchi to the hot pan.
- 26. Fry the gnocchi for about five minutes until golden brown, turning them occasionally.
- 27. Lightly salt the gnocchi.
- 28. Add a piece of butter and the remaining thyme to the gnocchi.
- 29. Toss the pan well to combine everything.
- 30. Season the gnocchi with salt and pepper.
- 31. Plate the Chicken Parmigiana.
- 32. Serve the meat together with the gnocchi and tomato sauce.
- 33. Enjoy your meal!
- 34. Tip: If you have Parmesan, grate it over the chicken breast fillet.
- 35. This gives the dish an extra savory touch.
