🍽️ Chicken Breast in Lemon Sauce on Creamy Zucchini Noodles

Ingredients
- chicken breast fillets 600 g
- lemons 1 pc.
- zucchini 2 pc.
- oil 6 tbsp
- honey 1 tbsp
- salt pinch
- pappardelle, fresh 500 g
- pepper, black ground pinch
- sour cream 200 g
Instructions
- 1. Preheat the oven to 100 degrees Celsius with fan.
- 2. Thoroughly wash the chicken breasts, lemon, and zucchini.
- 3. Pat the vegetables and meat dry with a kitchen towel.
- 4. Grate about one teaspoon of lemon zest.
- 5. Cut the lemon in half and squeeze out the juice.
- 6. Trim the ends off the zucchini.
- 7. Peel the zucchini into long strips using a vegetable peeler until you reach the core.
- 8. Remove the hard core of the zucchini.
- 9. Halve the zucchini strips lengthwise if they are too wide.
- 10. Mix the lemon juice, lemon zest, two tablespoons of oil, and one tablespoon of honey in a bowl.
- 11. Heat two tablespoons of oil in a pan over medium-high heat.
- 12. Season the chicken breasts with salt.
- 13. Fry the chicken breasts on all sides for about five minutes until golden brown.
- 14. Mix the fried chicken breasts with the lemon marinade.
- 15. Place the chicken breasts back into the pan.
- 16. Place the pan with the chicken breasts in the oven for about twenty minutes.
- 17. Bring a pot with about five liters of salted water to a boil.
- 18. Cook the pappardelle for about five minutes al dente in the boiling water.
- 19. Drain the noodles in a colander.
- 20. Return the drained noodles to the pot.
- 21. Heat two tablespoons of oil in a separate pan over medium heat.
- 22. Fry the zucchini strips in the pan.
- 23. Season the zucchini with salt and pepper.
- 24. Cook the zucchini covered on low heat for about ten minutes.
- 25. Mix the sour cream and the cooked zucchini with the noodles.
- 26. Season the noodle and zucchini mixture with salt and pepper to taste.
- 27. Remove the chicken breasts from the oven.
- 28. Slice the chicken breasts crosswise into slices about one centimeter thick.
- 29. Mix the juices released by the chicken breasts with the noodles.
- 30. Plate the chicken breast slices together with the zucchini noodles.
- 31. Serve the dish and enjoy your meal.
